Answer your question about the oil finish, its an on going thing once a year .with very light sanding.

And yes, the tung oil will need to be reapplied, but it will offer protection and I like the natural look.

The white rocks block a lot of your LED light. I would recommend doing glass stones. If you want change in color, use RGB LEDs with clear stones.

LOVE the color and look ❤️ ! I can't believe you hate it.... It's so gorgeous. I am most definitely going to build me one. The natural look goes perfect with the plants and the concrete slab. Everything just flows together so naturally. The corner style is just such a wonderful use of space too.

1/5 stars, not enough pocket holes... I kid. Looks great! The glowing effect is really cool. Modern alien plants.
Have you ever considered using hand planes to reduce the amount of sanding you have to do? They produce shavings instead of dust, so you can do it inside, and the surface is so smooth you have to go over it with 220 grit just to give the finish something to stick to. Not sure if it's slower than sanding, though.

straight tung oil or linseed oil will turn to a yellowish hue after a few years in the sun. I recommend danish oil, or for longer protection (especially outdoors), an actual sealer like polyurethane

I used to work in a factory making windows and doors from cedar
You do need to continually oil it if you want it to look nice, a varnish will last a bit longer with out needing to be renewed
Also a belt sander with 80grit on it should sand cedar down pretty well
Though this was western redwood cedar in Australia, so might be a bit different
