Thank you chef. I experimented with this and you're right, your method of incorporating air is exactly what Khalifa Bakery does. However, one key difference is your use of baking powder. Khalifa bakery does not use baking powder. I tried your recipe with baking powder and compared with Khalifa naan khatai. Your recipe made too many bubbles while Khalifa bakery was more dense. That tells me that they do not use baking powder. I would recommend trying this exact same recipe without baking powder to replicate the texture from Khalifa bakery 100%. The only other problem that I had was that after incorporating air, the mixture was too soft to shape into cookies.
To get the particular texture, key is to keep the Gluten from formation. That you have exquisitely expressed 👍. Rising it by incorporating air is another top notch level technique for hard batter cookies. Not many of the self claimed UA-cam master Chefs know about it.

The measurements are so in correct.12 gms of b.p is 2.7 tsp.3 cups of maida is 384 or approx 400 gms n 1 cup of sugar is 200 gms.accuracy is v important in baking so either u give measurements in volume or in weight bcz if somebody is doing by weight so he will put 12 gms of b.p which is 2.7 tsp n it will ruin the recipe so plz just for correction give exact measurements.hopefully u won't take it personal.thanks for so many excellent recipes u shared.
