My shot is that this mule is for the new Maserati Levante. Stelvio was not based on Levante's platform but Levante had some things from the old Jeep. What do you think?
I have a Grand Cherokee L and the breaks work fantastic. Aside from that, it would take a ton of work to turn it into something that would be considered an "Alfa Romeo". If anything, I could see it being turned into a long wheel base Maserati Levante.

The mystery is solved! I found it puzzling that while the launch of the new Stelvio is approaching, there hasn’t been any sighting of it in camouflage. No vehicle resembling the Stelvio has been spotted undergoing testing. Typically, camouflaged prototypes start appearing on the roads up to two years before their official release, but this hasn’t been the case with the Stelvio or Giulia. It seems Stellantis has opted to rebrand a Jeep Grand Cherokee with an Alfa Romeo badge and call it the Stelvio. My assumption is supported by Alfa Romeo's current struggles, including its reputation for poor reliability and limited appeal. Given this, why would Stellantis invest heavily in a product that isn’t generating substantial profits?
The Giorgio products don't have a poor reputation for reliability and is it limited appeal or poor promotions and lack of dealers that make the Stelvio/Giulia poor sellers? I say it's poor promotions and lack of dealers.

I agree, an Alfa Romeo should stand out from the rest, and I don't know if the Grand Cherokee L will really translate well for an Alfa.

Is it possible, powertrain, chassis, brakes, suspension etc... They can clearly test with a different body on top and still get decent data.

Grand Cherokee is body on frame, why bother to try to use it as as a mule for unibody STLA platform? Why not use Wagoneer S that is on STLA platform?
