I think that goat cheddar was made by Montchevre which is based in Wisconsin, not Vermont. If I may suggest a VT cheesemaker, Vermont Creamery's Bonne Bouche, an aged, ash-ripened goat cheese is incredible.

Chili cheese dogs hold a dumb big place in my heart. The last time I saw my uncle before he was killed, he had made me one and we sat and laughed. Since his passing, it just .. means a lot. I get a little sad, but in a happy way ? It is a rollercoaster to eat one hahah
Josh's description of the chili at the Sonic is 100% dead on. I worked at a Sonic for 2 months 25+ yrs ago and that's how it was made/came in. We heated it up by putting it in those metal pans inside a frier basket that sat in the fry oil. The cheese at my location was a queso from a crockpot the franchise owner brought in as he preferred that over just putting shredded cheese on top. I feel sorry for Nicole that her first chili cheese dog experience was at a Sonic. That's kinda the low end of the spectrum. They should have and could have found better quality ones elsewhere.

He used those small packets of microwavable ham, heated them for 30 sec, tossed on the grill to get the brown, tossed a cheese slice, and then made the sammich.
It always gives me anxiety when people take a bottle of spice and shake it over a steamy pot... You're getting moisture in the bottle and it can ruin your spices! In that kitchen it's a high turn around for spices but in a home kitchen, just don't do that!
Won't make a difference they absorb moisture from the air anyway the small amount from steam won't change much. They are designed with a shaker cap for a reason.

My mum adds 1oz of unsweetened chocolate to her chili but this recipe is almost the same
