AHHH! you bought back fond memories. My mother used to cook them for us when I was younger. They are hard to find here now. Pig Trotters and pickled beef tongue were used to make a Braun. Yum, That piece your mother wanted is like our Braun. only without the tongue pieces. Thanks for the memories.

This is a common dish in west Asia, Caucasus and Balkan countries . In Turkey we call it “paçha “soup or shurpa and we serve with diluted vine vinegar mixed with minced garlic . I think smilies soup called in Greece as “Paza”

We have similar dish, it is made the same way only the meat is pork instead of beef. I never ate the one made from beef, and would love to taste it. Usually it is prepared during winter at the end of November.✌️

Very interesting video, thank you for sharing some of favourite Russian traditions. The Italians make a variation called ‘bollito’ (boiled), several different cuts, pork, beef and chicken are slow cooked with celery, onion and carrots. The result is a hearty stock and tender boiled meat. It can be thinned into a soup with pasta or reduced to concentrate the gelatine. But I think the one thing that’s similar..is the smell 😅

We in South Africa have a similar dish. I remember the smell. The 'things' you ate from within the bone normally caused a playful fight. I don't like it. That is sold in France as a delicacy. I normally bought the big bones and boiled it for my dogs.
My father used to make something similar to your dish. He made a lot in a huge pot. Some will get curry in. He will through it in bread pans. At that stage I don't eat it. When it is set my dad will turn the pans upside down, put each one in a plastic bag. The 'braun' is ready to eat. My mother used big bread pans so the loaves of braun were also big. We sliced it in thin pieces and ate it on our sandwiches. It never lasted long as we will eat a slice or two when passing the fridge.

I'm glad you confirmed it smells bad while cooking. I know that people also eat goat, lamb and pork "trotters" but all really smell bad while cooking -- and it takes hours to cook.
(I'm surprised it is not highly seasoned with spices?) Good to know it tastes good, but I'm not likely to try it! (The "transparent that tastes like jelly" seems to be gelatin. The dish contains a lot of that and collagen, I expect.)

Svitlana, I am farmer boy (even though I am old) & I want to ask , are you sure that is a cows foot ? To me that looks like a pigs foot & the meat does look like pork not beef !! I speak basic Russian as I lived in Kharkiv for a around 1.5 years before the war. I ate this dish at a gf, s house with her parents. Yes it was tasty but , lol, I dont see many UK residents trying it. There is a lot of work in preparation & I think here in UK people would reject even the thought of this !!

For beef hoof or pork hoof soup, we cook exactly as you do in this video (except normally we just cook for 45 minutes to 2 hours instead of 3 days) so everything in this video smells so good to me and gets me hungry.

Of course, it was cold and there was no leathery smell from it being hot, so I can see why khash may not be as olfactorily desirable. That said, I would eagerly dive into this dish and enjoy its rich flavor and texture😊. Thanks for the recipe, Sveta!

It is actually cheaper than dog food!

The lovely and gracious Svetlana!!! Thank you for sharing another piece of your family tradition. I have to think that something like this comes from austere times when people were trying to survive. It was probably of no value to the Lords of the time, but the serfs ate it to stay alive. Such things as Surströmming, Sauerkraut, Nato or fermented bean curd, are all in a group of foods that were eaten in adverse times but carried over into good times as traditions stayed alive. Making some of them taste good is usually the challenge. Another Great Video! tnx ben/ michigan ps when are you getting together with your fiance' and coming over to u.s.a.
