The result is a hearty stock and tender boiled meat. It can be thinned into a soup with pasta or reduced to concentrate the gelatine. But I think the one thing that’s similar..is the smell 😅

I normally bought the big bones and boiled it for my dogs. My father used to make something similar to your dish. He made a lot in a huge pot. Some will get curry in. He will through it in bread pans. At that stage I don't eat it. When it is set my dad will turn the pans upside down, put each one in a plastic bag. The 'braun' is ready to eat. My mother used big bread pans so the loaves of braun were also big. We sliced it in thin pieces and ate it on our sandwiches. It never lasted long as we will eat a slice or two when passing the fridge.

We use that too but it is smoked and dried pig hoof to put in a dish called manestra, which is version of italian minestrone. It gives certain nice smokey and meaty flavour to the dish. And is very delicious.
I'm glad you confirmed it smells bad while cooking. I know that people also eat goat, lamb and pork "trotters" but all really smell bad while cooking -- and it takes hours to cook. (I'm surprised it is not highly seasoned with spices?) Good to know it tastes good, but I'm not likely to try it! (The "transparent that tastes like jelly" seems to be gelatin. The dish contains a lot of that and collagen, I expect.)
Svitlana, I am farmer boy (even though I am old) & I want to ask , are you sure that is a cows foot ? To me that looks like a pigs foot & the meat does look like pork not beef !! I speak basic Russian as I lived in Kharkiv for a around 1.5 years before the war. I ate this dish at a gf, s house with her parents. Yes it was tasty but , lol, I dont see many UK residents trying it. There is a lot of work in preparation & I think here in UK people would reject even the thought of this !!

This is common in Asia specially in China and Philippines 🇵🇭 , in my country PH it was called Patatim , Pata means Pigs feet , it was very delicious rich in collagen because of ligaments and bone marrow of the feet. it's the best when you cook like Patatim / Braised Pigs feet 👍💯
It's not disgusting. It's tasty. We in China cook pork and beef hoof in a million ways. There are big knives especially made for cutting those thick stuff. For beef hoof or pork hoof soup, we cook exactly as you do in this video (except normally we just cook for 45 minutes to 2 hours instead of 3 days) so everything in this video smells so good to me and gets me hungry.
In Mexico, there is a soup called Menudo. It is common here in the US too. It often has pig's foot, cow's stomach and intestine, and hominy. It sounds gross, but it is delicious. Some say it's a cure for a hangover. Looks like Khash is similar to Menudo. I would try Khash.

I love kholodetz, especially with horseradish or sharp mustard! My grandparents and father used to periodically make it. Of course, it was cold and there was no leathery smell from it being hot, so I can see why khash may not be as olfactorily desirable. I don't know if insta pots are popular in Russia, but they do really well with bone-in meats you want to make into a stew like this. We also cook pork shoulder, or other bone-in pork in the instapot for the dog. Then we add come carrots and green beans for her cooked a little with the meat and broth. It is actually cheaper than dog food!

Such things as Surströmming, Sauerkraut, Nato or fermented bean curd, are all in a group of foods that were eaten in adverse times but carried over into good times as traditions stayed alive.
