I bought a Frick's shank ham the other night. It was the only one I could find that had no water added and not spiral cut. I watched this video and was able to carve it up perfectly. It was, by far, the BEST ham I have ever made! It had so much flavor and was not dried out at all. The sandwiches yesterday were amazing and I'm making bean soup tomorrow. If you happen to find a Frick's ham at your local grocery store, pick one up.
THANK YOU, for saying "cross grain" instead of the very common and incorrect "against the grain" which exactly the same as "with" the grain effectively, but the other direction. GREAT JOB!
I'm in the same boat. Doesn't taste quite as good when it's been frozen, but it's still good, and the stuff lasts for a while. Now I always have some ham to eat if I get hungry and there's nothing in the house. Good quarantine supply!
This is a little bit nicer. I remember living on a farm so we had HUGE hams for Christmas. The sows and bores were grown on our farm so it was way bigger than anything you would see in a store.
We always have this cut for Christmas and Easter carved the same way. We make a stock from the bone for soups and stews then pick and grind the meat with baloney. Add dill relish and mayo for old school ham salad.
