great recipe, i add half a green pepper diced in with the onions and apple is great, also i use Heinz tomato sauce instead of the puree its a game changer for me as i like the sweetness it gives. it tastes like the famous Caroline street curry, fab

I'm an American and here curry sauce on fries (chips) is an uncommon thing to say the least, but the idea of combining tomatoes, apples, raisins, and curry powder is blowing my mind. Can't imagine what this tastes like, but I'm sure it's delicious.

Quick suggestion, instead of taking out the fruit, you could part blend/blitz the final sauce. Blitz untill desired texture :) Blitz fully for smooth sauce. Personally i blitz partially so only a few small lumps
It worked well. I made three separate batches to fiddle with the process a bit. First batch identical to your recipe. Second batch I used an immersion blender instead of straining. That worked out well too, and a bit less mess (due to me selecting a colander larger than the bowl underneath, d'oh!). Third batch I did was let it thicken down and then bring it back up with some actual chicken stock (not the Knorr cubes), and that seemed to come out the best of them overall. And again, with the immersion blender on the third batch.
I'd probably stick mine in the blender to get rid of the chunks but other than that it looks good. Had curry fries(American here) at the local Irish pub here in NJ. I loved it a nice mix of sweet and spicy.

As others have mentioned. I make mine in a similar way. The only difference is once cooked I use a stick blender to make it all nice and smooth👍👍

A little tip, open the wings of the stock cube and press it down on the counter until all crumbled, then tear open and sprinkle into the jug.

Little hack I learned the oxo is a bag made of foil in a square shape an you break it up in the bag to save your hands getting messed up
