  • ✳️PUMPKIN PIE
    Ingredients for the curd base:
    - 400g cottage cheese
    -100g natural yogurt or sour cream
    - 2 eggs
    - Small packet of vanillin
    - 100g sugar
    - 3-4 tbsp. heaps of flour
    - Milk (about a glass - look at the consistency - the thickness should be like pancakes
    For the pumpkin base:
    - 500g pumpkin
    - 1 orange
    - 2 eggs
    - 100g sugar
    - from 4 tbsp. flour, and then look at the consistency - it should be like pancakes
    Cut the pumpkin into several parts and bake in the oven for 20-30 minutes until cooked.
    Place cottage cheese, yogurt or sour cream, 2 eggs, vanillin, sugar and flour in a bowl. Blend with a blender until smooth. Add milk little by little until the dough reaches the consistency of pancakes.
    Cut off the skin of the baked pumpkin, add 2 eggs, 100 grams of sugar and 4 tablespoons of flour. Blend with a blender until smooth.
    Grate the orange zest and add to the dough. Add orange juice there. Add flour little by little to the desired consistency.
    Grease a baking dish with oil. My mold is 26 cm in diameter. Take turns laying out the curd and pumpkin mixtures, 1-2 tbsp each.
    Bake at 180 degrees for about 40-50 minutes until done.
    Let the casserole cool (it is too tender when hot) and you can remove it from the pan and eat it.
    ✳️ PUMPKIN-LEMON PIE
    Ingredients:
    - 300g peeled pumpkin
    - Lemon
    - 250ml kefir
    - 150g sugar
    - 270g semolina
    - 1 tsp. soda
    For the syrup:
    - 100ml water
    - Lemon juice
    - 100g sugar
    We clean the pumpkin and grate it on a fine grater. Add lemon zest, kefir, sugar, semolina and soda. Mix the dough.
    Place in a mold and bake at 180 degrees for 30-40 minutes.
    Mix water, lemon and sugar, put on fire and bring to a boil.
    Pour syrup over the finished pie.
    ✳️ PUMPKIN DINNER WITH CHICKEN AND APPLE
    Ingredients:
    - 800-900g chicken fillet
    - 500g pumpkin
    - 2 apples
    - Butter
    Cut the fillet into pieces, put it in a frying pan, add salt and pepper, add dried garlic and fry.
    Cut the pumpkin into cubes.
    Peel the apples, remove the core and cut into pieces.
    Add pumpkin and apples to the chicken, add spices (I used paprika and herbs) and butter. Fry for a couple of minutes.
    Add half a glass of water and simmer covered for 20 minutes until the pumpkin is ready.
    ✳️PUMPKIN CASSERLE
    Ingredients:
    - 2 eggs
    - 50ml kefir
    - 1/2 tsp soda
    - 2 tbsp sugar
    - 100g cottage cheese
    - Vanillin packet
    - 50g flour
    - 300g pumpkin
    - 2 medium apples
    - 1/2 tsp. ground cinnamon
    In a bowl, mix eggs, kefir, soda, sugar, cottage cheese, vanillin and flour, mix.
    Grate pumpkin and apples and add to the dough. Add cinnamon and mix.
    Place the dough in the mold and bake at 180 degrees for 35-40 minutes.
    ✳️PUMPKIN CAKE
    Ingredients for the cupcake:
    - 140g sugar
    - 1 glass of vegetable oil
    - 3 eggs
    - 2 cups of flour
    - 1 tbsp. baking powder
    - 0.5 tbsp. ground cinnamon
    - 500g pumpkin pulp
    - 1 cup walnuts
    - 0.5 cups raisins
    For decoration:
    - 2 bars of white chocolate
    - 3 tbsp. vegetable oil
    - food coloring
    - chocolate gel (or chocolate topping, or melted dark chocolate)
    Set the oven to preheat to 180 degrees.
    Mix sugar with butter. Add eggs, then flour, baking powder and cinnamon. Mix everything thoroughly until smooth.
    Chop the walnuts and soak the raisins in water.
    Grate the pumpkin on a coarse grater. Choose a sweet pumpkin variety.
    Add nuts, raisins and pumpkin to the dough, mix everything thoroughly again and place in a baking dish (do not forget to grease it with oil first).
    Place in the oven for 40 minutes until done.
    Let the cake cool while we make the glaze. Melt white chocolate in a water bath. Add vegetable oil and orange dye to it. If the color turns out too pale, add a double portion of dye or mix, say, yellow and red colors.
    Pour the frosting onto the cake and spread it over the entire surface. Let the icing cool, then use chocolate gel (you can melt dark chocolate, pour it into a plastic bag, cut a corner and you’ll get a homemade piping bag) to draw eyes, a nose and a mouth on the pumpkin cupcake.
