I'm from México and for me the cheese made 100% from pure cow milk is the best, the ones that are industrialized are made with little to no milk at all, and are chemicals for the most part, I know it because I worked at a cheese factory and after tasting the ones made by independent farmers, I only bought those instead of the industrialized ones.
As far as the FDA, I have literally no trust in that agency or anything it says!

I don't think Velveeta is a cheese either. It would either be a "Cheese Product" or "Cheese Food" depending on the level of ingredients. At least in the US. But there is a difference between Kraft and American cheese. American is a real type of cheese. Kraft isn't. But we kind of mix the titles up and Kraft is called American cheese at times.

I'm with you mano. I haven't eaten Queso Fresco for 11yrs but I feel you. I make Paneer which is basically an Indian🇮🇳 version of queso fresco & I never became sick from it,no hospital/E.R. trips or anything like that. So it's either bs or we are the exceptions to this.

@@jdturnier8539 Paneer we also consume in mexico but we name it panela, tip, when you can't get queso fresco just smash paneer with a fork to make it in crumbs and it's great too! I do think the risk is with people that may not have good care while storing it and getting it cross contaminated with some other stuff. as long as you have it well stored in a container and in the fridge, you're golden.

It is important to take good care while storing it & to not cross contaminate said food. Right again man. It's got a lot of vegetable oil added in to aid in it's melting into such a smooth and creamy sauce.. so Yes, a Cheese "food product" much like Kraft individually wrapped American cheese singles is a Cheese "food".. I have discovered using just regular cheddar and blending in some cream cheese, milk or cream, has the nearly same effect, a smooth quality cheese sauce without the added oil..
The process is why Velveeta is room temperature shelf stable, you don't need to refrigerate it until it's opened.. same with Kraft singles..

Yeah, this is very obsolete information. Dietary cholesterol does not equal blood cholesterol. In fact, not eating enough cholesterol may lead to hormone imbalances, because it is a precursor chemical for testosterone and estrogen. Your body is supposed to handle all this automatically, but eating too much fructose and glucose, as well as certain transfats (yes, there's even a theory about good vs. bad transfats), can cause the body to improperly manage any myriad of chemicals, including cholesterols in all their varieties (LDL and VLDL being the ones you don't want too much of in your blood).
You know, everything is bad for you now-a-days. Eat what makes you happy, just do it in moderation.

Animal fat is good for you. Fat satisfies one's hunger, so less is actually eaten (as opposed to carbs). Dairy in general is good for you. I'm not worried about the methane sheep produce either. There are plenty of larger wild animals that run in herds in Africa that produce a lot more. And so do termites. I think anyone that's going to cut back on sheep cheese because of methane to "save the planet" doesn't have a very good sense of how little difference their cheese consumption makes.
I have not eaten Limburger, I am Mexican and eating queso fresco or panela is something essential in our culinary style. I'm 62 and nothing has happened to me.
This bacteria on Limburger cheese and what some people have between their toes, is Brevibacterium linens. It is not only on Limburger but also on many other cheeses from several countries. I already know since ages that it is attracking flies because if you eat it on a warm day outside then the flies are bothering you around your face but last year I faced something disgusting: I am Dutch so I buy my cheese always on the market. I bought some delicious French smelly cheeses. I came home and took some crackers and I took the new bought French cheese to put it on the crackers. There were tiny yellowish worms crawling in the French cheese and I discovered it after I took some bites already. I never felt so disgisted before, I was vomitting and didn't dare to eat it for a long time and decided from that time on to only eat it in winter and only buy it in an indoor store.
By the way, I buy every week at least 1,5 kg cheese for our family of 4. I eat it a lot and just every day. My yearly bloodcheck is always very good. Also good levels of cholesterol and other blood fat. Cheese is also very good for your teeth to neutralize acids in your food and I believe the bacteria in cheese is chasing away bad mouth bacteria as well. My 31 years old daughter has zero cavity.

I feel the strong need to put my two cents on the table. First off eating fat doesn’t necessarily make one fat. Fat happens to be s much better fuel source. [I should point out I’m not a keto-er in any sense]. Eating cholesterol wouldn’t necessarily make your cholesterol sky rocket. Your body makes as much as it needs. When you eat less cholesterol you make more of it when you eat more you make less of it. Cholesterol is necessary for hormone function amongst many other important processes in the body. More recent studies are showing low sodium diets are actually causing hypertension as opposed to treating it.
Low sodium means high sugar. Sugar is very dangerous, and should be cut as much as possible. And the industries that use sugar learned from the best, which is to say the tobacco industry. Get 'em early, keep 'em hooked.
New research is suggesting it is eating carbs that is making your body produce fat and the accompanying cholesterol.
I eat 4-8 eggs a day and drink whole milk. I reduced my carb intake and overall proportions and lost 20lbs. I have 120/80 bp. Not a keto-er as well.

I watch a lot of cooking shows (I need help!), and I've noticed that a lot of professional chefs mispronounce it as "marscapone" as well. I think it's a case of one idiot saying it the wrong way and then a bunch of other people repeating it because that's the way they heard it and never bothered to look at the way it's spelled.

I drank a lot of orange juice during the lockdown, which resulted in dark teeth. Acid destroys your enamel. But after eating a lot of cheddar cheese, my enamel is literally growing back and the black stains on my teeth are fading away. Because cheddar has a high amount of calcium and phosphorus, it benefits your teeth' healing significantly. It also tastes so good. I don't mind the high salt content in cheddar since African diets are really high in salt. They're still ok. If you have black teeth due to drinking coffee, eating too much acidic food, please give this a try!

In some ways this lady sounds like what the feds sounded like when they decided to get rid of the protective coating and wash all eggs despite almost every country in Europe acknowledging that there’s a protective coating that as long as it isn’t thoroughly washed and scrubbed will protect the egg from disease and rot. Some eggs were probably bad but enough of them were good to the point where Europe serves eggs without refrigeration and without washing at supermarkets.

"Don't eat these cheeses" Velveeta is a cheese product. Like that stuff that comes in a squirt can. It's not even kept in the cheese section in the grocery store. That said, I used to eat a whole block a week when I was 13 to 16. Velveeta with jelly sandwiches after school. Wonder bread and Miracle Whip, Two thick slices Velveeta, strawberry preserves. Washed down with a quart of milk. 2 hrs later, dinner.
Basically, I would eat none of those cheeses except for cheddar anyway.

The majority of the cheeses sold in my cheese shop come from sustainable farms where the animals have names, not numbers. If you want to learn about cheese, there are several great books written on the subject. Cheddar is a family of cheeses and refers to the process NOT the cheese. It is when you continue to cook the curds on low temp after separating from the whey, then the wheels are pressed and stacked on top of one another. Each day the wheels are rotated so as the wheel on the bottom of the stack is on top until the original wheel is at the bottom again. This is the process of "cheddaring"
I have friends out here who name their cows , chickens etc . I got to name the new chicks last year , tasty, fingers, nugget, wings, & of course burger . Yeah they were great, I recommend the Cornish broilers, they grow fast & large mmmmm tastey !..
