In France, we eat beef tripe. It is not as popular now as when I was a kid. It used to be cheap, but now it is quite expensive for what it is. It usually cooked in white wine with carrots and tomatoes. I love it.

Tripe has to be cooked for hours to make it soft. Maybe the vendor did not cook it long enough; it should not be chewy.
