    You have to add kumquat and sugar to Mắm tôm and mix them all together till it becomes foaming. It's now ready to serve.

    In France, we eat beef tripe. It is not as popular now as when I was a kid. It used to be cheap, but now it is quite expensive for what it is. It usually cooked in white wine with carrots and tomatoes. I love it.

      Tripe has to be cooked for hours to make it soft. Maybe the vendor did not cook it long enough; it should not be chewy.

    the fried tofu and ma tom was one of the highlights of my trip
    waqs there for 13 days and must have had mam tom nearly every second day

    Thanks. Fun. I'll check out a few in October. So, I've seen many of your videos (glad you are back on your feet), you seem to call younger women 'sister' and older women 'auntie'. Are these common Vietnamese terms, like Miss and Mam? Thank you.

      Yeah pretty common if you speak the language. If you’re a tourist no real need to say it

    I went on a food tour this winter 😂 in Da Nang. Went to 5 different restaurants. At one we were having duck eggs. I thought they were hard boiled eggs, but half way through I realized it was a baby duck. Crunchy beak,

    Khi ăn mắm tôm bạn hãy pha thêm tí đường và ớt sau đó vắt chanh và đánh cho khi nào bọt lên bạn nhé! đừng ăn mắm tôm với chanh không vì nó mặn và chua lắm!

      It's called kumquat [ˈkəmˌkwät] in Vietnam.
