I wish there was a LOVE button!! I love baking bread and pizza dough, but I always thought starting a sourdough seemed so hard to keep up with.....so I vote for you share how you do it please! In the mean time I will come up with a name for my new starter...lol

What a fine looking pizza dough you made, pure perfection. Good use for the discard, so many people dump it down the drain, big mistake, causes a lot of plumbing problems. I make a few doughs ahead of time and par bake them, then freeze, ready when I am. Pizza looks good, we don't care much for red sauce, I make a lot of white pizzas or make bechamel with added parmesan or pecorino ramano but like your idea. Thanks good info, especially on the starter, I lost "Guido" (my starter) a while ago and should start a new one. I also love King Arthur, they have the best recipes.

Carol, I could not agree with you more. We also have 2 in our home and I just don’t want SD every week. Once you get it started, it is super flex. Another great recipe for discard is the KA SD crackers. Really delicious. A lot of folks create discard just to make the crackers. Another thing to think about is you don’t have to keep that much starter on hand. I use a half pint jar and maintain at 10:20:20 grams. I feed every 10-14 days and store in the frig. After feeding,when it is on the rise, I stick it in the frig. When ready to bake, I will feed a couple of times at a 1:3:3 ratio to build the volume and then use it. I don’t have much discard and it is easy to use up. The pizza looks great. Will definitely try this.

Can this crust be made in advance, then placed in the freezer before adding toppings, till needed, then thawed to bake? If yes, then do I let it rise prior to freezing?
Technically yes, so if you need more discard for a recipe than you get from your starter you can put it in the fridge until you accumulate enough. But you don’t want to keep it too long without using or feeding it.😊
All of the steps are shown in the video. I don’t list the steps bc too many people will just take the recipe and never watch it. It takes a lot of time to film and edit so it’s important to a creator to have people watch. Many creators don’t even list ingredients for this reason. YT recommends our videos based on views 😊

The only disappointing part of this recipe (that looks delicious) is the idea of using commercial yeast. It's an absolute 'no, no' for me, making anything sourdough. It's not true sourdough.

I’ve never done that but there’s no reason you can’t. I’d let it rise after thawing 😊

So leave it out. It’s only a small amount so you’ll just need a vigorous starter and more rose time
