You can absolutely do them without a light! When I started out I used the sun for everything - as long as it’s sunny it sets nicely. However if you’re trying to do anything that requires a quick dry (catching frosting drips on cake, water waves, frozen moments) - that’s when you’ll have a tough time with just the sun.
I like your planning! The non-committed fruit in syrup is such a good idea! Same w/ the boba around the edge of the drink!
