Wow! But quick tip, if you brush down the sides of the pan with water while making caramel, you can avoid the sugar build up! Just while it's boiling, a little bit of water brushed down the sides....
too bad there is no instructions candy making is more than adding some of this and some of that and voila its more precise measurements please redo with actual instructions

if you pay attention to his measuring cups you'd see, the mousse depends on the recipe and ingredients available to you. Maybe it was his own recipe
