Heat 2 tablespoons of butter and 1 tablespoon of oil in a large skillet or pan over medium heat. Add the chopped onions and sauté until they turn golden brown. 4. Remove the marinated chicken from the refrigerator and add it to the pan. Cook the chicken until it is browned on all sides, but not fully cooked through. Remove the chicken from the pan and set it aside. 5. In the same pan, melt the remaining 2 tablespoons of butter. Add the tomato paste and cook for a minute to remove the raw taste. 6. Add the crushed tomatoes to the pan and simmer for about 10 minutes, stirring occasionally. 7. Using an immersion blender or transferring to a regular blender, blend the tomato mixture until smooth. Return it to the pan. 8. Stir in the heavy cream and dried fenugreek leaves (if using). Cook for another 2-3 minutes. 9. Add the partially cooked chicken back to the pan and simmer for 10-15 minutes, or until the chicken is cooked through and the flavors are well blended. If needed, add some water to adjust the consistency of the gravy. 10. Taste and adjust the salt and spices according to your preference. 11. Garnish with fresh cilantro leaves. Your delicious butter chicken is now ready to be served. It goes well with naan bread, rice, or roti. Enjoy!
