since I do visuals then weapon of choice would be Modul8 or VDMX with some midi controller, however, was lookin thru namm2024 stuff, and there was a synth that reminded this video, its called "Audio Computer Weather Station" really cool design & sound reminds a bit your stuff too
That is a waveform visualiser. It displays waveform signals from the instrument out into the recorder (out of the frame). It is made by digdugDIY. You can find his shop in Etsy and he is also on IG. Hope that helps! ☺️
