Another trick I have found, in addition to all of Beth's great tips, is (for those of us who don't have well-seasoned pans) use parchment paper and put the potato wedges skin side down. That way they don't stick and don't need flipping, but still cook and crisp up beautifully.
Hey guys! I've started to experiment with the video captions. So if English is not your first language you can click the CC in the video player and translate what I'm saying into your native tongue :) Let me know if this is helpful (since I realize 50% of my audience is outside the US!) and if it is, I'll find the time to do it! :) That way everyone will be assured success! (you can also turn the off by hitting the CC too!) Enjoy!
love the captions! I undertand perfectly what you say everytime, but it is very useful for knowing the proper name of certain things and how to they are writen :) Greetings from Austria.
Great, easy tips to remember. And I love, love, love those old looking pans because it really says a lot about how much you cook at home, plus they look great in photos!
Omg!!!! Thank thank you thank you for those fantastic tips on potatoes I really needed them because i love and cook with potatoes. I use to have some problems roasting them and didnt know why..and girl that tip on shaking the pan every ten min..its a keeper!!! Thank you! your the best! God bless you.🍣🍞
You always seem to put a smile on my face. You're so cheeful and happy. Thanks again for your helpful and professional videos. You know I'm a great fan of yours!! All my love going your way from Madrid, Spain.
These are a new staple ever since watching this video! They really are foolproof and come out perfect every time! I get a lot of compliments on them too. Thanks Beth for making me look so dang good when company comes :D
Hi Beth! I know that I asked for a home tour before (which obviously doesn't really relate to your channel), but I would also love to see a kitchen tour! We always see tiny snippets of where you cook, but not really the whole thing. I think that it would be nice :)
That's a great tip about waiting for the potatoes to loosen naturally when they are ready to flip! I've fought with them before trying to get that golden brown crisp on them. Thank you!
Thanks so much for the great tips when roasting potatoes Beth.......I tend to unstick the potatoes that are stuck on the pan, I won't do it anymore, enjoy your week, take care.
Hey Beth, love your channel. I love to roast potatoes, so I watched this and found that you do your roasted potatoes pretty much exactly how I do mine, except for the shaking the pan instead of flipping trick. I've just been doing 15 mins then flipping. I'm so excited to try the shaking every 10 mins!
I've always loved your videos. I first came across your channel when I was looking for French macaron recipes. I hope you know that people really enjoy what you're doing! ...and I'm baking these potatoes right now :)
I learned so much from this video. Thank you. One question. Would I still be able to use a well-used pan for my cookies (like I used for the potatoes)?
Hi Beth! I just discovered your channel today and haven't put my phone down for the past 4 hours! I am loving your recipes. please keep uploading new ones. also do you have a cook book? ~Mehreen~
+Mehreen Anwar Aww thanks Mehreen :) So glad you enjoy the videos! I don't have a cookbook yet, but definitely something on the "to do list!" Promise to keep you all posted when I do! :)
Ha! Oh sure you could try the same method and see if it works? :) Or use the recipe here in my roast chicken video: These are great too! ua-cam.com/video/_DPgFoDiTvY/v-deo.html
Beth, like always your videos are amazing. thanks for these useful tips for roasted potatoes. In this time of the year i roast many potatoes. Happy weekend, Patricia.
Thanks Beth! I didn't know the tip about old pans! I usually parboil my potatoes, let them drain in a colander until they're not steaming anymore and then toss them in oil put them in the oven. I find that this creates a nice crust... The downside is that it takes double the amount of time and more washing up! ;)
Christos Evripidou ha! Yes that does sound like double the time, but really tasty too! Try this recipe and let me know if it saves you the extra step? :) Enjoy!
American roasted potatoes are nothing like British ones. We tend to go for the floury ones like a Maris piper or king edward, peel, chunk par boil then roast in oil that has been pre heated in the oven. They are served with roast meat, gravy and vegetables. They have lovely fluffy insides and a nice crispy coating. However I have got to say I am way more of a fan of these kind. Waxy potatoes have way better flavour and they lend themselves to lots more meals. I really like the tip about shaking the pan. It works so much better than attempting to flip.
omg!! THANK YOU! I've struggled so much with having my potatoes stick to the pan!, then washing the pan is a pain.. then i just dont wanna cook them anymore because its SUCH a hassle haha but it seems ill be making them more now :) great video! keep them coming! :)
I don't understand why I just discovered your channel! I like how clear you are explaining even what some would think is obvious. The only other cooking channel I like is laura vitali's because she too gives tips in a non condecending way for some of us non talented cooks :D Keep going as you are, I love it and I'm sure the others do too! :)) and thank you for your time. BTW I live in france and I love how you have a lot of tools and seasoning from there. I like Maille mustard better than Amora though.
roxybes Ha! I know. It's mainly a time/cost thing. I actually have a full-time job, so the channel is really just a "side passion project", throw in 2 kids and a 2 hour commute and you see there just isn't a ton of time left to do much more :( It's also expensive because I hire a crew to do my shoots, so I have to make sure the channel's advertising can offset the costs each month. BUT I do have a little surprise for you all next week that I think you will like for the holiday season :) Stay tuned for that! xx
Hi Beth...as always I love watching your videos. Question: For those of us who don't have a well seasoned pan yet...would lining the pan with aluminum foil work? In advance, many many thanks!
Honestly in the Middle East we talk Arabic. But it's not a problem because we talk English all the time so it's no big deal :D. Thanks for this video it's more like a go to method for me. Thanks again.
Good job Beth , I would be proud of my self if I had your channel , it's really good when I don't have my own recipe it's called look at Beth , and can you do a kitchen tour please I'm curios what it look like , thanks and please don't ever stop UA-cam
I made Yukon potatoes and purple yams just like this last night! I added some garlic as well. Made me smile seeing this video. It was a paranoid "were you in my kitchen last night?" moment. ;)
Sara Schultz Emily hancock Vivian Li oh sure thyme would be great! :) Or even just salt and pepper, with a little smoked paprika would be quite nice too! Enjoy!
Oh yes! Thanks for asking Rene! Lots of fun things in the pipeline! The one thing I'm really excited about is that I found a sponsor to help me bring back the holiday menus! Yippppeee! So I'll be doing a Thanksgiving one and a Christmas one (these are the videos that have 5 recipes and then I show you how to put it all together?) So excited for this! :)
Hello, I'm not sure if campfire cooking falls under your realm of expertise, but could you do a tutorial on how to cook orange blueberry muffins in an open fire? Thank you!
Hi Beth! Could you please do a vegan pumpkin pie recipe? It's my favorite dessert but with my recent change in diet, I can't seem to find a good recipe out there. I know I can trust you on a flavorful recipe!

Pumpkin Dolly Oh sure you could use the red new potatoes, purple potatoes or fingerling potatoes would be great too. Any small, waxy potato will be great.

Great recipe with descriptions of what potatoes are best for what outcomes and the terrific tip on shaking the pan in the oven.
Oh yes it's all about the shaking of the pan! The potatoes already know when it's time to flip ha! They just need a shake!
Awesome recipe!
I added some garlic and used thyme instead of rosemary.
First try today : total success among family members! Merci beaucoup!
Yum! These look like perfect golden bites, the perfect fall comfort food!
These remind me of Laura Vitale's rosemary roasted potatoes! :)

Anneliese Baumann Ha! maybe some day :) My husband is French. By birth I am American, but now I am a dual citizen by marriage. I speak French but it's not perfect. Ha!
