    Another trick I have found, in addition to all of Beth's great tips, is (for those of us who don't have well-seasoned pans) use parchment paper and put the potato wedges skin side down. That way they don't stick and don't need flipping, but still cook and crisp up beautifully.

    Great, easy tips to remember. And I love, love, love those old looking pans because it really says a lot about how much you cook at home, plus they look great in photos!

      Oh yes it's all about the shaking of the pan! The potatoes already know when it's time to flip ha! They just need a shake!

    Hi Beth! I know that I asked for a home tour before (which obviously doesn't really relate to your channel), but I would also love to see a kitchen tour! We always see tiny snippets of where you cook, but not really the whole thing. I think that it would be nice :)

    That's a great tip about waiting for the potatoes to loosen naturally when they are ready to flip! I've fought with them before trying to get that golden brown crisp on them. Thank you!

    Great vid! In the UK we boil them for 5 minutes then shake to fluff the edges then roast. Really delicious! X

    Hey Beth, love your channel. I love to roast potatoes, so I watched this and found that you do your roasted potatoes pretty much exactly how I do mine, except for the shaking the pan instead of flipping trick. I've just been doing 15 mins then flipping. I'm so excited to try the shaking every 10 mins!

    Thanks Beth! I didn't know the tip about old pans! I usually parboil my potatoes, let them drain in a colander until they're not steaming anymore and then toss them in oil put them in the oven. I find that this creates a nice crust... The downside is that it takes double the amount of time and more washing up! ;)

    American roasted potatoes are nothing like British ones. We tend to go for the floury ones like a Maris piper or king edward, peel, chunk par boil then roast in oil that has been pre heated in the oven. They are served with roast meat, gravy and vegetables. They have lovely fluffy insides and a nice crispy coating.
    However I have got to say I am way more of a fan of these kind. Waxy potatoes have way better flavour and they lend themselves to lots more meals.
    I really like the tip about shaking the pan. It works so much better than attempting to flip.

    omg!! THANK YOU! I've struggled so much with having my potatoes stick to the pan!, then washing the pan is a pain.. then i just dont wanna cook them anymore because its SUCH a hassle haha but it seems ill be making them more now :) great video! keep them coming! :)

    I don't understand why I just discovered your channel! I like how clear you are explaining even what some would think is obvious.
    The only other cooking channel I like is laura vitali's because she too gives tips in a non condecending way for some of us non talented cooks :D Keep going as you are, I love it and I'm sure the others do too! :)) and thank you for your time.
    BTW I live in france and I love how you have a lot of tools and seasoning from there. I like Maille mustard better than Amora though.

      roxybes Ha! I know. It's mainly a time/cost thing. I actually have a full-time job, so the channel is really just a "side passion project", throw in 2 kids and a 2 hour commute and you see there just isn't a ton of time left to do much more :( It's also expensive because I hire a crew to do my shoots, so I have to make sure the channel's advertising can offset the costs each month. BUT I do have a little surprise for you all next week that I think you will like for the holiday season :) Stay tuned for that! xx

      Pumpkin Dolly Oh sure you could use the red new potatoes, purple potatoes or fingerling potatoes would be great too. Any small, waxy potato will be great.

    I lived off potatoes in college. Ate them in every form possible - fried, mashed, roasted, steamed, etc. Def need to try this recipe out!

      PixelGirl2006 Oh yes I know we are LONG over due for a real time recipe! Yes once we get through the decadence of the holidays I will bring them back in January for sure! I've been dying to share my "Feed me fast" chicken recipe! So good, easy and quick :) Stay tuned!!

      Anneliese Baumann Ha! maybe some day :) My husband is French. By birth I am American, but now I am a dual citizen by marriage. I speak French but it's not perfect. Ha!
