Hi Kathrine. I have tried but my cake collapse after taking out from the oven. One thing I realised is that after putting in my cake with the room temperature water bath, the reading on my oven thermometer drops drastically from 150°C to 110°C. Should I turn up the knob to achieve a 150°C temperature on my oven thermometer?

May I know that set as lower heat or upper + lower heat? Need set fan or not?

Do not set fan on any cake baking that use hot water steam. Why? Because fan can dry up the cake surface. We use hot water steam bath is to allow the cake get moistened along baking process

Nancy Chia For your first question I think the reason that she put the cake tray into a bigger tray before putting onto another tray filling with hot water is to prevent any seeping of water into the cake tray itself as it has a removable bottom
You can add some cheese powder into the batter, think it'll taste good. You must be a cheese lover!

Do not overbeat egg whites, soft peak will do. Your oven may be too hot, try baking at 140C for a longer period.
