Hey, they're both very good. BPS is more vanila, very close to the Minecraft game, simple, doesn't lag and runs fast. MC blend rig form assets is also very nice with cartoony look, and good controls. However, I will be using a new Minecraft character rig in the near future, and will teach you all how to use it.
Hey, there are a few differences, you will find out more if you try them out. The end goal is the same though - make making Minecraft animations in Blender easier and faster.

Hey, I figured it out as well. You need to select the character mesh, then go to the shading tab. and select the character node group (it should be called "skin"). Then click on TAB to go inside that node group, and there you can change the skin with the image texture node.

You could check material slots and UVs but I'm not sure still.
