  • Ube Macapuno Cake Roll is made of a soft ube flavored chiffon cake rolled and filled with ube swiss meringue buttercream and macapuno strips.
    INGREDIENTS:
    Bake in a preheated oven at 170C for about 20 to 25 minutes
    For Cake Butter:
    - 4 egg yolks, from large eggs at room temp
    - 4 tbsp sugar
    - 1/4 cup canola or vegetable oil
    - 1/3 cup water or milk
    - 1 1/2 tbsp ube extract
    - 1 cup cake flour
    - 1 1/2 tsp baking powder
    - 1/4 tsp salt
    - 1/4 cup ube halaya or ube jam
    For Meringue Mixture:
    - 4 egg whites
    - 1/2 tsp cream of tartar
    - 1/3 cup sugar
    Ube Swiss Meringue Buttercream:
    - 4 egg whites
    - 1/2 cup sugar
    - 1 cup ( 227g ) butter
    - 2 tsp ube extract or flavoring
    - 2 tbsp ube jam or ube halaya
    - 5 tbsp macapuno strips ( for the filling )
    - glazed cherries ( for topping ), optional
