    Hi, could we have a more detailed recipe over more programmes. Also, detailed ingredients as everything is done so quickly I can’t keep up and feel I’m losing out of vital info. I want to learn from Chef Rhea, she’s brilliant.

    Chef Rhea, you did a lot of great demonstrating for a traditional Bajan feast. One thing that bothers me, health-wise, is the habit of adding salt to everything . . . and sugar or alcohol to so many dishes . . . and then added oils and frying even for things that, when presented, no guest would know were fried. With a pandemic of chronic diseases, we need to get away from added salt, added sugar, alcohol, processed condiments, in favour of pure herbs and spices. We need to recalibrate our taste-buds to recognise and to enjoy real foods without so many processed items . . . from bottles, cans, and tins . . . instead of trees, plants, and ground.

      She's cooking in a hot climate so you need salt for flavour and to help in preventing "cramps"
