I made something very similar to this not long ago. The primary difference was the use of cream cheese instead of the sour cream. I thinned the cream cheese with a little of the green enchilada sauce for the filling and I added the remainder of the cream cheese into the remaining green enchilada sauce for the "gravy". It was SO good. You have made me want to make it again! And I just roasted a chicken in the crockpot............

Your chicken stock looks good. I thought using stock would be a good way to refresh Thrive, especially in emergency situations to save water. I will try this meal on my son-in-law. Do you think Thrive’s green chilies will work as well? Can the fiery ones be purchased online? I prefer milder, but my s-i-l will like fiery. He has not been in favor of Thrive, but maybe this meal will help convince him. I will try the sliced onions, too.
The chicken stock worked great! I think that the green chilies would work, but they are definitely not as strong or spicy as the canned or fresh. I am sure that you can purchase the spicy ones online, and if he likes heat, try the Hatch Green Chiles. They have so much flavor, but are on the spicy side. And I loved the sliced onions!

I hope you have been doing well. I was thinking maybe we could think of another collaboration soon. I am trying to come up with some ideas. You really couldn't tell the difference, but I did like using chicken stock to rehydrate it. It gave it more flavor. I am considering another collaboration, but wanted to get caught back up first. In Ca we use both corn and flour. I add rice, corn, black beans, chicken. Whatever we have on hand. Pico de Gallo is good in it too. Las palmas is quite tasty, I'd like to find that recipe. Most green sauce recipes are quite tart and spicy.

They have a different flavor from a poblano, but those might work. The chiles are roasted and peeled, then diced.
