- Tandoori Chicken is famous far beyond India. Today, we turn this classic restaurant style dish into a fried chicken sandwich recipe with garlic naan burger buns, a refreshing mint & garlic raita and quick pickles.

🍗 Tandoori Fried Chicken Recipe
400g chicken breasts (3 pieces)
200g yoghurt
1 Tbsp garam masala
1 Tbsp curry powder
1/2 Tbsp cumin powder
1 Tbsp minced ginger
1 Tbsp minced garlic
2 tsp salt
🫓 Garlic Naan Burger Buns Recipe
250g bread flour or all purpose flour
3,5g instant yeast
5g salt
10g sugar
75g water
100g yoghurt (3,5% fat)
🥒 Cucumber & Mint Raita Recipe
200g yoghurt
1 small cucumber, grated and pressed
small handful chopped fresh mint
small handful chopped cilantro
1/2 tsp dried mint
1/2 tsp sugar
1/4 tsp salt
1/2 tsp chaat masala (optional; or some more salt)
🧅 Pickles Recipe
50g sugar
20g salt
450g hot water
150g white vinegar
1 Tbsp mustard seeds
1/2 Tbsp cumin seeds
2 onions, rings
2 green chilis, sliced
1 cucumber, sliced

You can add some real tandoor style smoky taste to it, by putting a hot piece of charcoal in ghee in a small steel/ceramic container and putting the said container alongside the chicken pieces in a closed Dutch oven for a few minutes. That's how we give a smoky taste to food in India without a tandoor. Other than that, amazing fusion :)

Lol, most decent South Asian/Pakistani owned chipshops/fried chicken shops in the UK likely has a tandoori/tikka inspired fried chicken burger on their menu for decades that's pretty much this. There's plenty of Pakistani (and probably other) food content creators that have also covered this basic idea, too. I'll admit it's cool that we're getting another UA-camr shine a light on this for another audience of home cooks but let's not get ahead of ourselves and pretend this is anything brand new for everyone.
I'm not saying restaurants aren't using food coloring but you get a really beautiful reddish orange without food coloring if you can source genuine kashmiri chili it also gives ti a very distinct smell and flavor without giving it too much heat.
As ever you're kicking out some fantastic fusion cuisine. Love it

I love your channel Andong, this is crazy, I put a tandoori fried chicken roll on my cafes menu a few months ago! I went with mango chutney, raita, coriander and mint! Somebody accidentally used sour cream instead of yoghurt for the marinade and it turned out even better. Keep up the great videos.

@@satyrnarainmathur359 Today it is made by pasteurized cream with acid-producting bacterial cultures, the bacteria thickens the cream during fermentation and makes it more acidic. It usually contains less fat than crème fraîche and tastes a little bit more sour.

Most importantly, it can self-regulate the oil temp! That is the biggest advantage imo. Otherwise it is cleaner to use but messier to clean :D

That looks incredible. What vegetarian substitute would you use for the chicken? Tofu works well in curry, but I'm not sure if it's also suited for a sandwich
to me it is a perfect blend of ingredients but reminds me more of a Persian or Middle Eastern style sandwhich. I have been to a few Indian restaurants in NYC and didn't care for the food that much (I guess it was southern style take out Indian food, not an upscale place). And most of the Middle Eastern restaurant sandwhich bread is too thin for me (that is why I like this thicker bread, as well as the garlic). Also the Mint Yogurt sauce would be my favorite sauce. The Fried Tandoori Chicken looks delicious. I would definately order this from a local restaurant on a regular basis.

This would be very popular in the UK, Indian food (Indian, Bangladeshi, Pakistani and Sri Lanka) is eaten constantly here.
Chicken tikka and chicken tandoori sandwiches are very popular in the UK, but using the actual naan styled as a burger bun is a good idea.

I made this as a special once, the color didn’t really carry over after being fried for some reason. Was really good though!
we in india eat it as more spicy so we use more kashmiri chilli so it will be reddish in colour. But in some restaurants they use red food colours.
I hope McDonalds starts offering it soon.

As delicious as it looks, the whole premise of "Tandoori" chicken is that it's roasted & not fried. But still, great fusion. Looks tasty af.
I would add lime or lemon juice to the tandoori marinade and also kala namak - black salt to the raita for that original sulphury flavour.
Maybe a pizza oven could mimic the tandoori flavors, just a dripping pan with a rack, marinaded chicken inside in an ooni

Hi Andong. You might like more if the chicken are done the way that Chicken 65 did.. Its uses the almost the same marinade.
Easy trick would be to take some hot coal and put a spoon of ghee on it and cover it with the chicken for a few minutes, makes all the difference and adds that bbq tandoori flavor. Also your marinade is missing mustard oil, this takes the chicken to the next level. Would use a yogurt green chutney instead of the Raita. Salted butter on the naan is the norm in India and would do this burger wonders. Thanks for the video. Gonna try making this tomorrow

fucking love this. there is unironically a huge space for expansion for fusion fried chicken, I've been thinking about fusion soul food a lot recently
One question I had about the recipe... why not fry the buns in garlic butter instead of the dry pan? I understand for flat breads dry pans are usually the go to ie: tortillas, but having to wipe the pan in between buns might be tedious (looks like there was some stickage).
For color you can use Kashmiri lal mirch powder..

I am wondering how air frying such tandoori chicken would work.
If you freeze the battered chicken for an hour, the breading doesn't fall off in a pan. Bread crumbs are only meh on fried chicken. Not nearly as good as flour or a mix of flour and corn starch. This recipe never tastes like fried chicken to me but it's a great way to enjoy Chicken tandoori. It's a version I enjoy every now and then.
