The rotation increases surface area leading to faster evaporation rates, while applying vacuum lowers boiling points to reduce thermal damage to products. Typical process that they are involved in are solvent recovery and purification, concentration, distillation, and powder drying. Some more unique processes rotary evaporators are a part of are crystallization and molecular cooking, while with some rotary evaporator kits you can do refluxing as well as evaporation.
