I map out 31 on a regular keyboard, got used to how that functions. As I don't put emphasis on playing but rather composing, I can take my time and often even count steps to see what I'm doing. I know by heart what intervals I'm dealing with based on steps. I continue with the piano roll in my DAW to work stuff out/see where I want to go.
