I have heard of this Chef, although I never met him during my 45 year career in Québec & Canadian kitchens, but I fully understand all of his frustrations that led him to retire. I myself started my 54 year kitchen career in my native Ireland, then London, UK, Switzerland & Paris, France before coming here to Québec in 1975 for the Montreal Olympics. It is a very demanding job I must admit, so I wish him well in his ‘early’ retirement. I retired in 2017 at age 69 years, I have had a wonderful career except for my last employment, but I must be honest that London, UK was by far my most enjoyable moments of all my 53 years in the kitchen. Now I dedicate the rest of my life praying to Jesus & thanking him for such good health that brought me so far.
Sad to hear, but Happy for David. The courage to decide to stop regardless of revenue and other factors, it takes guts to still make the choice to stop and take care of yourself.

Dave needs to put his memories down on paper. The apprentice experience in dank cellar kitchens that smell of waterlogged wood. Crates of vegetables arriving on delivery, arguing with the suppliers. Busy record breaking shifts doing over 400 covers. Exhaustion from a days work. Fights among the kitchen staff, fights among service staff. Restaurants are full of drama.
@@jas_bataille No doubt. One of the most satisfying experiences is putting together a huge service. Then at the end of the evening, guests walking out totally stuffed and happy. I remember some shifts when we ran out of food, late night stragglers would show up looking for a table, the kitchen staff would collectively have a chuckle at the unlucky latecomers. Nothing says success better than an emptied walk-in fridge with nothing left but a few carrots, celery and onions. The suppliers would call in the morning, in disbelief, over the new order for EVERYTHING. One time, the manager leaked the fact that we sold over $2 million in food and beverage that year.
Sometimes burnout comes and giving up being the boss is the best thing you can do for your mental health. Something also changes in you when you hit your fifties, especially if you have worked your butt off since your late teens or early twenties. It's already 30 years in or more! Teachers commonly retire at their 30 year mark, so do factory workers. It's enough! Enjoy your farm, family, friends, enjoy your 2-3 days at Home Depot. Let another ambitious youngin's take your place. Congratulations!
Understand. Having HAD to cook for myself for many years do understand it is hard work especially the cleaning. You forgot waking up in the middle of the night thinking that you forgot to order bread or forgot to call the thew fish guy. Any thing you do for a long time grates on your nerves. Remember when cooking was the best part of the job. I also want just a real job without any stress. Well I did that and I wish I was back in the kitchen most days.
