Hi, Les! That's a pretty grill. I've never had a grill nor been one for outdoor cooking, but that's a gorgeous grill. The chicken looked tasty, but that sweet potato dish - sweet potatoes with onions and seasonings - oh my stars. I'm saving that recipe. I've done something similar, but I didn't add Italian seasonings. Note to self, add Italian seasoning. I've always been a Weber man, but this looks pretty well built and dare I say, on par with grilles they offer for much less. They may have converted me.
I was thinking of getting a Monument Mesa grill... I noticed on yours the handles of the doors do not line up evenly. That would drive me crazy... I still may get one though.
Skipping the jokes about being a "leg man", thighs are the go-to for flavor and tender! Hint: cook 'em till about 140, pull off and quick cover with aluminum foil for 5 plus minutes. The temp will rise a little more and they will be a little more tender. Keep on!
