I'm totally not judging this process but I don't understand the point. Is it taste? Is it presentation? I never peeled tomatoes in my recipes and it was fine. Does this change the taste/texture?
People who peel and deseed their tomatoes are at the next level of their nutritional education . The skin and the seeds of tomatoes contain an ingredient called lectins. Lectins is the compound that causes allergic reaction for people who are allergic to shellfish or peanuts, etc. To avoid any allergic reaction to the lectin in tomatoes, we peel the tomatoes and remove the seeds. This is the little I know. Lol.
I know but this is for making sauces and lot of people asked me for a simple way to peel and some people have trouble digesting the seeds Raw I would eat them as a fruit or in salads Also seeds are very high in potassium and lot of people have kidney issues so to avoid further damages to kidneys without totally avoid them Enjoy cooking ACT
Of course you can ! I’m sure Chef Tony and most people here know that . I love a fresh tomato , skin and seeds . However , there are some dishes where the skin once it comes off , adds an unwanted texture. Others not so bad . Probably just a preference thing, unless you want a very smooth textured sauce.

Even for pasta sauce?
It’s texture more than anything else. I take the peels and dehydrate then grind up and use as a tomato ‘pop’ in recipes or to thicken

Just enough that the peel gets lightly wrinkly, about 5 secs
