I respect Cow Mata because it's the king of meat. It's so much better than pork and chicken. Nothing can beat beef innards, not even mutton or fish. Cow Mata when cooked with bamboo shoot and michinga leaves gives the best flavour. Hail to the King of Meat. Hail Cow Mata.
