I collected those Broken Bank Notes for a while back in the late 90s and early 2000's. I don't think anyone mentioned it but these banks were given the right to print currency in direct line with the bank's monetary holdings. Many of the banks got greedy and printed more than their holding. When things caught up with them, they went bankrupt with stacks of bills in sheets. I like them for their artistic designs. There is a catalogue out there for them, but I am not sure which is best. There are so many banks in every state, that it is best to collect either by topics or location like you did. I like the ones with locomotives and Newport RI for which we traveled with our kids throughout the 90s.
Not an expert on US currency but in the 1800s in the UK there were also many private banks issuing banknotes. In the UK, the lack of a filled out date indicates the note was never issued, usually because the bank went under. Such notes are typically in nice condition because they never circulated - as with your examples. Slightly more puzzling is the signature, as these don’t usually appear on unissued notes. Most likely they were pre-signed and put in a pile awaiting dating, but it’s also possible that the cashier acquired some of the notes after the bankruptcy and signed them to increase their collectible value.
I've started working on a typeset for pennies recently. I've got a classical head, a matron head, a coronet head, a flying eagle, some indian heads, a vdb, wheat cents, steelies, memorials, the 2009 commemoratives, and shield cents. I still need the pre-1810s large cents and a modified matron head to complete my typeset
I found your $1 bill with the lady in the middle on EBAY with the date "Fed 16, 1894" on it. And your 2 and 3 dollar bills have patent date of June 30, 1857. All of these bills were printed by National Bank Note Company which printed almost all the state bills at the time.

The printed "18" is just to the left of the "1 One" in the top right corner, under the 'K' in the small type New Brunswick.
