I'm surprised you didn't mention using the slice mode on the simplier to chop up the breaks which is what I use. It's much easier since you don't have to manually chop the breaks up and move the parts around and can just play the parts of the break through the keyboard. You can also use arpeggiators, randomizers along with the instrument rack and velocity randomizer to make the breaks more chaotic

now the hard part: chopping vocal samples and choosing where to get them rather than Nichijou/Azumanga
a thing I personally like to do with breaks is cutting out the kick with EQ and using a separate kick track, because usually it's punchier
