Went to this floating market when I visited Bangkok last month. It was very good but keep it mind that this market is open only on the weekends and holidays from morning to about 3-4pm only.

Depends on the recipe but generally the sauce is water, oyster sauce, dark soy, light soy, chinese cooking wine, sugar, salt and pepper. I think he also splashed some sesame oil in the pot before serving.
