I have always done it this way, within a couple of years it creates a straight whip and you can't tell where pruning cuts were. I will try and post a picture of a tree a few years after grafting This method also means you can get a lot more grafts from a stick of scion

I'm interested to know what rootstock these where grafted to, do you still have that info?
Maybe use canes for straight growth of your scionwood. Have you been removing cell growth like that for some years? I'm interested in the results.
