It’s so nice to see such a young couple with so much knowledge on all of the gardening and processing all of these delicious things!! The area I live in is so dominated by drugs that most of the young people are in addiction!! My 19 yr old grandson left for the army in April and is now at his first duty station in CO. He left because there’s nothing here and because he always wanted to be a soldier!! I’m incredibly proud of him❤

Becky, about the onions dear, if you like them so much, plant them 🤗. You’re not allowed to get sick or have anything to hold you back on any of what you like to do, SHOULD you fall a little under the weather or life gets busy as you said, you’ve enough family that’d gladly harvest and cure them, your sisters and mother in law, and parents - they’re all right there, ready and willing. AND you KNOW none of your viewers would say no to helping you if you needed anything ♥️ … travelling could hinder many but I put it in there because we would all be more than happy to lessen your load. You’re an absolute 💎 gem 🥰

Walla Walla onions are so different in taste from the keeper onions, I love having the sweeter onions frozen for use all winter. Of course the winter keeper onions are needed for basic needs. The sweet onions are just special.

Btw Becky told us she started getting her nails done to stop her biting them but my sis is a nail tec and yes they can cause dermatitis or it could be the rubber gloves, or the scent, or the constant hand washing that we all know she does or any number of things. She likes the nails and it obviously has worked to stop the biting so we all get to go on the why does she have dermatitis journey with her. I'm sure all of us have advice about this subject lets all remember to be the lovely community of nice people that Becky has built here.

Hi Becky: I always enjoy your channel. I was watching another homestead type channel and their family was taking care of dried beans. I see you have a lot of dried beans to deal with too. This family had a really neat way of getting the beans out of the pods. They used an old pillow case, put a bunch of the beans in the sack and hit the ground with it. Not too hard so as not to split the individual beans. The got all their beans taken care of in a couple hours. Most of the pods were 100% empty. Their kids checked the pods and found any beans that did not separate. Sorry I can't remember the channel but maybe you've already seen it. Looked very easy. Food for thought! Take care.

Something my grandma did when her onions were beginning to go bad was to boil them, bite size pieces, until tender. Drain well and make a cheese sauce to pour over them. Delicious!! Of course, she never had the amount of onions that Becky has. It makes a awesome side dish at Thanksgiving.

Hi Becky, I do unscented almost everything as well. Even if you don’t like the dish soap - get the hand soap. I buy the unscented hand soap and it is lovely! Thick, lathers, works really well! The dish soap was quite disappointing though. You have to use lots and lots and it just doesn’t clean well.
The best unscented dish soap I have found is from field day it’s kinda thin but it lathers well and actually cleans well. I just wish it came in a bulk container.

Little tip bury carrots in totes of sand sand and put them in the basement the totes should be solid no light less light the better fill totes half way with sand the carrots sould be pressed half way in sand you should be able to see whole carrot and don't forget to keep them dry prep them as you would for putting them in the fridge but they need to be bone dry before you put them in the sand they should last about 4-6 months if done correctly

As you have probably found out by now. Onions will shrink in the freeze dryer. I did a medium chop and they came out small but just as I wanted them. I ground up some for onion powder and just saved the rest in Mylar bags. My freeze dryer is on the basement and it smelled of onions for a few weeks!!

I don't believe it's entirely necessary to do a hot water bath with those peppers. If it's anything like pickling fish, fill your jars with the hot peppers and pickling water, seal the jars, and let them come to room temperature. The jars will seal themselves as they cool, and they will be safe to eat later on. It would save you so much time to do other things and get you out of the kitchen sooner. I hope you find this helpful. Love your videos too.

Becky, if you use oxygen absorbers inside your bucket with a gamma lid, you will not have to freeze your berries. Then you don’t take the chance on getting mold in them. But if you’re going to freeze your berries, then you need to freeze them for like three days to kill eggs. The oxygen absorber will kill any eggs that are inside the berries. Four or 5 gallon bucket you need 2500 cc of oxygen absorbers. And you don’t open the bucket for three days after you put them in there that will make sure everything in there is dead. You can order the berries like that already with oxygen absorbers in mylar bags, but it’s much more expensive. I get mine from Azure like you do, but then I put them in my own buckets and seal them with the oxygen absorbers inside the bucket.

If you don't get recommendations for a replacement onion for this, you should grow them again, just knowing that these onions will be designated as your "freeze dried", "powdered", or "freezer" onions, and the others will be your fresh use onions

Becky, please get a collapsible wagon. ❤. I wanted to help you carry things. If you can, it might help you from multiple trips. I purchased one and it changed my life. You can even get the kind of wagon wheels. Where it can go up and down the steps.
