Over the las 3 years I have learned to can several differant items. Last year for Christmas my Daughter got me the electric canner you have that I had in my wish list on Amazon. Celebrate sweet onions as a joy to eat fresh every day spring and summer. I've always eaten them all up leaving only storage onions for storage. Grow some. Also try seeding earlier for larger bulbs.
Cooked for 30 to 50 people a day for 17 years. When you peel and quarter your onions then wash them. You don’t get tears. Especially if you scrub the cut end
Hi Becky…we don’t grow onions but we do buy a variety of different onions for different purposes. I think I would use your Patterson variety for mostly cooking. There is nothing like a sweet Walla Walla for slicing on to burgers and sandwiches. So I say go for it and grow the Walla Walla! I can’t see you letting them go to waste, you are so inventive and diligent about preserving and processing everything. I so enjoy watching you cook and preserve in your kitchen, you are amazing!
Grape juice makes delicious jelly. I use the low sugar Surejel, and you can't tell it's not as sweet. I do this with cranberry juice and others I can find without having been sweetened.
A few weeks ago, I water bath canned for the first time. It was cowboy candy, we grew a lot of jalapeños this year and it was our final harvest. I'm super new to canning. I have learned so much from you. I did the towel in a big pot trick to can them. Thank you for sharing so much knowledge. I felt so well "taught" from watching all of your videos that it didn't feel scary.

FYI the dicer attachment does not have a way to make the size of the diced fruit or vegetable. The size lever is for slicing only. Also the heaviest part of that attachment is not water submersible. Only the blade and the dice disk and the shoot are water submersible. Just don’t want viewers to buy the attachment thinking everything can be put into a dishwasher.
You should definitely still grow walla walla onions- they grow so big and yield so much food for you. It would be good to grow those to exclusively chop them and keep them in the freezer for convenience onions ❤ I think it's a win-win, for sure! Walla Walla onions are so different in taste from the keeper onions, I love having the sweeter onions frozen for use all winter. Of course the winter keeper onions are needed for basic needs. The sweet onions are just special.

Have you thought about getting cranberry bushes? You could start one from a seed! An Acre Homestead starter!! Plus I know you like blueberries- I just seen something called a pink berry and it’s a pink sweeter blue-berry 🎉! Then you could mix the berries and have purple jellies and juice and freeze dried if you want?

Hey Becky ☺️ I have a suggestion about washing produce. I’ve seen this in some Korean vlogs. Basically they put their produce into a bowl full of water and wash it while in there. Then they move it to the colander to drain off. I think the benefit of this method is that you use less water, and you can clean them nice and efficiently because the water definitely gets everywhere with less effort.

Hi Becky, I prepare broth in separate electric roasters. Allows me to free up lots of freezer space, carcasses, beef, and pork bones as well as veggie scraps. Then i run three electric canners (free up my stove top). I only bring out my AAs when I have a ton of meat to can, then i can double stack quarts.
Becky, I had terrible eczema for a number of years. I tried topical things and very careful with soaps trying to heal it. Answer I found was: Focus on my gut!! What I eat that triggers it-avoid and focus on what helps my gut-Add. Almost immediate help after trying so many things!!
Hi Becky: I always enjoy your channel. I was watching another homestead type channel and their family was taking care of dried beans. I see you have a lot of dried beans to deal with too. This family had a really neat way of getting the beans out of the pods. They used an old pillow case, put a bunch of the beans in the sack and hit the ground with it. Not too hard so as not to split the individual beans. The got all their beans taken care of in a couple hours. Most of the pods were 100% empty. Their kids checked the pods and found any beans that did not separate. Sorry I can't remember the channel but maybe you've already seen it. Looked very easy. Food for thought! Take care.

The area I live in is so dominated by drugs that most of the young people are in addiction!! My 19 yr old grandson left for the army in April and is now at his first duty station in CO. He left because there’s nothing here and because he always wanted to be a soldier!! I’m incredibly proud of him❤

You’re not allowed to get sick or have anything to hold you back on any of what you like to do, SHOULD you fall a little under the weather or life gets busy as you said, you’ve enough family that’d gladly harvest and cure them, your sisters and mother in law, and parents - they’re all right there, ready and willing. Becky, fragrance free will help a lot, but I found out I had to fix my gut also. Whether it's the foods I ate or didn't, or pre and probiotics. I had to cut back on cheeses and flour for a couple months and it was like a reset. Good luck. Took me 3 years to figure mine out.
I have eczema on my hands and the biggest difference has come from wearing rubber gloves when I wash dishes or clean. The dish soap and cleaning products really made my hands break out. I also use unscented Castille soap for hand washing and showering. The less fragrance and chemicals the better. Dr Bronner's and Kirk's Castille are both good brands.
I've grown Big Daddy onions with great success - they got softball-sized two years ago (this year's crop got eaten to the ground by grasshoppers - twice). They lasted at least five-six months in our root cellar! If you're looking for a sweet onion with some storage capability, Candy is a great option; they tend to last 2-4 months depending how you store them.
Great haul and harvest! Youre doing a wonderful job! Walla walla are great for sweet onion jam, carmelized onions, and perhaps French onion soup. I have not tried the latter.
We started from seeds when growing onions and had better luck then using the onion sets, also. We were also told that you should move the dirt away from the onion so basically as it is growing mostly just the root is in the ground and you get bigger onions. We found that to be true, too.
I live West of Seattle. I grow Red As ppl in and Sterling. Sterling is resistant to bolting and with our crazy weather I worry less. I get my onions from Dixon dale Farms . I've been with them 11 years now and their customer service is phenomenal. Happy planting.
Btw Becky told us she started getting her nails done to stop her biting them but my sis is a nail tec and yes they can cause dermatitis or it could be the rubber gloves, or the scent, or the constant hand washing that we all know she does or any number of things. She likes the nails and it obviously has worked to stop the biting so we all get to go on the why does she have dermatitis journey with her. I'm sure all of us have advice about this subject lets all remember to be the lovely community of nice people that Becky has built here.
I used to have acrylic nails for years and all of a sudden I developed an allergy to either the acrylic or something else my hairdresser used to do my nails so I had to stop getting them done. I really miss having the long nails
I use B&BWorks, and sometimes I get a hand soap that causes it. I buy about 18 a year and probably 3 times. I'm going to keep track moving forward. Wonder if her soap. She said she was going to change to Azure. Hope she sees a difference.
Eczema flare-ups can also be related to seasonal irritants like pollen. I switched to using castille soap and a very thick hand moisturiser, which worked very well. I just have to be careful during spring when the tree pollens are at their worst.
Here's an idea. Carrots store great in sand in cool dark dry place. So if you filled a kiddie pool with sand in your basement you could put all your fresh Carrots in it. Maybe something to try.
Hi Becky, I do unscented almost everything as well. Even if you don’t like the dish soap - get the hand soap. I buy the unscented hand soap and it is lovely! Thick, lathers, works really well! The dish soap was quite disappointing though. You have to use lots and lots and it just doesn’t clean well. The best unscented dish soap I have found is from field day it’s kinda thin but it lathers well and actually cleans well. I just wish it came in a bulk container.
Just wanted to throw this out there for your eczema. The Amish farm soap works wonders for that and all types of skin problems. They have it in fragrance free as well and they are a small business. The soap has bentonite clay in it which is a detox for your skin. Some people use it you wash there hair and body and everything.
If you love Walla Walla & grew it successfully, why let repeating the simple pleasure be in doubt? Life is short! Grow what you love. Calendar a morning to process it, (early), next fall. There are several good long day keepers - you’ll land on one you love. 👍🌻☕️
I waterbath can in my presure canner. I use it like a steam canner. So it uses less water. Put the 3 qts of water in the bottom and load the jars and if you have 23 qt canner you can do 2 layers of pint jars put the lid on and once the lid lock pops up start your timer. DO NOT PUT ON THE PRESURE WEIGHT. works great. I can lots in pints so for handy to steam waterbath in the presure canner. 2 layers of pint jars. On my gas range, I use a med to low temp. Just to maintain a steady steam flow through the vent. Also presure can broth/stock in my presure canner in 2 layers of pint jars. So much more efficient than using a 16 qt canner . You Do have to get the extra rack to do the 2 layers of jars. Love your Chanel and always look forward to your next video. I am also a Washington resident. In okanogan county east side of mountains. But we did live in The Kelso/Longview area for a few years just north of you.
I learned to make grape jelly from Homemaking in school. I was in the 8th grade. It was fun and so easy. When you talked about making this is had a smile on my face thinking back on my school days.
my folks (in their mid eighties) usually make grape jelly each year from the grapes in their kitchen garden - good thing they have lots in the cold room - cause birds ate all the grapes during a dry spell this year 😮 though if I’m honest after all these years (am 64) I prefer their other jellies black currant, red currant, raspberry red currant, apple - but who’s gonna saw no to grape jelly 🍇 one of my nephews has asked for pepper jelly - he and his wife enjoy entertaining so it will be interesting to see how they use it - will be interested to see how Becky’s jelly turns out 🤞🤞
I would still grow the walla-walla onions. Just process them and use them frozen and chopped or sliced like you do. Or you can even freeze dry and use as minced or onion powder. You do get a good size onion for your effort

I did a fine dice with my Walla Walla Sweets and freeze dried. Absolutely a game changer! I had more than a half gallon when all done. They’re all gone! Next year I want to plant far more onions than I did this year.
16:58 the sugar bag has a thread for easy opening. You just pull from one end and the thread will come out! I love that type of closure. It’s so satisfying to open! …and kinda magical!
fyi: place uncooked diced peppers in jars, cover with sugar/vinegar mixture to 1/2 inch from top, then wipe rim of jar with white vinegar place lids with rings finger tight and proceed to can as usual. they wont be soggy from being cooked 2x
I love my KitchenAid chopper!!!! I use it like you for my jalapeño candy. I also use it to chop my rhubarb in the spring. I live in North Dakota, so I don’t get harvest it as late as you do. I also use it to chop my potatoes, onions and green peppers and make and vacuum seal my own potatoes O’Brien.. also if you don’t like hot cowboy candy the recipe I have cause for 6 pounds of jalapeños I’ll do half jalapeños leave the seeds on those and then the other half as a regular green peppers or red peppers and last year I didn’t have enough jalapeños so I made mine not Serano peppers that was amazing
You should do bulk cheese shredding. If you have the kitchen aide attachment that will make it easy. Ziplock sandwich bags filled with shedded cheese in the freezer.
I love how knowledgeable you are about canning! I have bought a pressure canner but haven't used it yet! I keep chicken carcasses and onion/carrot/veg peels and tops in my freezer but am so uncertain about how to create broth, so I thank you for making it look pretty easy! A quick tip for the excema, I use Yardley activated charcoal soap, it has helped my excema in a big way.
My husband works for a vegetable farm here in Ontario. He said Traverse Onions are the largest onions with a long shelf life.

I love making bone broth! I save poultry carcasses in a freezer bag. I also save all veggie scraps. I use my Instant Pot and it’s so easy!
I do mine in my crockpot overnight on low. I like the deeper color of the broth when I do it that way.

The floor with cardboard under is most likely the coolest spot down there. Putting the produce on shelves could put it in a warmer less effective spot

Becky, fragrance free will help a lot, but I found out I had to fix my gut also. Whether it's the foods I ate or didn't, or pre and probiotics. I had to cut back on cheeses and flour for a couple months and it was like a reset. Good luck. Took me 3 years to figure mine out.
Walla Walla Sweets are my favorite for making fried potatoes and onions together. I like to cut them up and freeze them for later use.
I have eczema on my hands and the biggest difference has come from wearing rubber gloves when I wash dishes or clean. The dish soap and cleaning products really made my hands break out. I also use unscented Castille soap for hand washing and showering. The less fragrance and chemicals the better. Dr Bronner's and Kirk's Castille are both good brands.

I've grown Big Daddy onions with great success - they got softball-sized two years ago (this year's crop got eaten to the ground by grasshoppers - twice). They lasted at least five-six months in our root cellar!
If you're looking for a sweet onion with some storage capability, Candy is a great option; they tend to last 2-4 months depending how you store them.
Grow both, but grow more of the storage onions.

Walla walla are great for sweet onion jam, carmelized onions, and perhaps French onion soup. I have not tried the latter.
We started from seeds when growing onions and had better luck then using the onion sets, also. We were also told that you should move the dirt away from the onion so basically as it is growing mostly just the root is in the ground and you get bigger onions. We found that to be true, too.
You could grow the Walla onions just for dehydrated onions and grow the rest for long storage
I live West of Seattle. I grow Red As ppl in and Sterling. Sterling is resistant to bolting and with our crazy weather I worry less. I get my onions from Dixon dale Farms . I've been with them 11 years now and their customer service is phenomenal. Happy planting.

Btw Becky told us she started getting her nails done to stop her biting them but my sis is a nail tec and yes they can cause dermatitis or it could be the rubber gloves, or the scent, or the constant hand washing that we all know she does or any number of things. She likes the nails and it obviously has worked to stop the biting so we all get to go on the why does she have dermatitis journey with her. I'm sure all of us have advice about this subject lets all remember to be the lovely community of nice people that Becky has built here.
I used to have acrylic nails for years and all of a sudden I developed an allergy to either the acrylic or something else my hairdresser used to do my nails so I had to stop getting them done. I really miss having the long nails
Nail polish can contribute to/ cause eczema.
I use B&BWorks, and sometimes I get a hand soap that causes it. I buy about 18 a year and probably 3 times. I'm going to keep track moving forward. Wonder if her soap. She said she was going to change to Azure. Hope she sees a difference.
Eczema flare-ups can also be related to seasonal irritants like pollen. I switched to using castille soap and a very thick hand moisturiser, which worked very well. I just have to be careful during spring when the tree pollens are at their worst.
Here's an idea. Carrots store great in sand in cool dark dry place. So if you filled a kiddie pool with sand in your basement you could put all your fresh Carrots in it. Maybe something to try.

Becky, if you poke holes in the bags you store your carrots in, I have found that they last longer! It helps it from being too moist inside the bag
Hi Becky, I do unscented almost everything as well. Even if you don’t like the dish soap - get the hand soap. I buy the unscented hand soap and it is lovely! Thick, lathers, works really well! The dish soap was quite disappointing though. You have to use lots and lots and it just doesn’t clean well.
The best unscented dish soap I have found is from field day it’s kinda thin but it lathers well and actually cleans well. I just wish it came in a bulk container.
Just wanted to throw this out there for your eczema. The Amish farm soap works wonders for that and all types of skin problems. They have it in fragrance free as well and they are a small business. The soap has bentonite clay in it which is a detox for your skin. Some people use it you wash there hair and body and everything.
Becky, i saw someone suggest using the onion discards to make onion broth. I tried it, so easy! Made wonderful rice and soup stock.
If you love Walla Walla & grew it successfully, why let repeating the simple pleasure be in doubt? Life is short! Grow what you love. Calendar a morning to process it, (early), next fall. There are several good long day keepers - you’ll land on one you love. 👍🌻☕️

I waterbath can in my presure canner. I use it like a steam canner. So it uses less water. Put the 3 qts of water in the bottom and load the jars and if you have 23 qt canner you can do 2 layers of pint jars put the lid on and once the lid lock pops up start your timer. DO NOT PUT ON THE PRESURE WEIGHT. works great. I can lots in pints so for handy to steam waterbath in the presure canner. 2 layers of pint jars. On my gas range, I use a med to low temp. Just to maintain a steady steam flow through the vent. Also presure can broth/stock in my presure canner in 2 layers of pint jars. So much more efficient than using a 16 qt canner . You Do have to get the extra rack to do the 2 layers of jars. Love your Chanel and always look forward to your next video. I am also a Washington resident. In okanogan county east side of mountains. I learned to make grape jelly from Homemaking in school. I was in the 8th grade. It was fun and so easy. When you talked about making this is had a smile on my face thinking back on my school days.
my folks (in their mid eighties) usually make grape jelly each year from the grapes in their kitchen garden - good thing they have lots in the cold room - cause birds ate all the grapes during a dry spell this year 😮 though if I’m honest after all these years (am 64) I prefer their other jellies black currant, red currant, raspberry red currant, apple - but who’s gonna saw no to grape jelly 🍇 one of my nephews has asked for pepper jelly - he and his wife enjoy entertaining so it will be interesting to see how they use it - will be interested to see how Becky’s jelly turns out 🤞🤞

I would still grow the walla-walla onions. Just process them and use them frozen and chopped or sliced like you do. Or you can even freeze dry and use as minced or onion powder. You do get a good size onion for your effort

Becky, I definitely think you should grow Walla walla Onions next year!! They are my favorite onions & it sounds like you love them as well. You must have said you were "so excited" to process and eat them so many times & if you're that excited to eat them, you definitely should grow them again. I also think if u want to, you will always find the time to process them!! I watch many UA-cam channels because Im disabled and don't get out much. Your channel is my absolute favorite out of all of them!!! I think it's because you're so down to earth & easy to relate to. Even when you make mistakes, you show them & I love that. ❤️. I did a fine dice with my Walla Walla Sweets and freeze dried. Absolutely a game changer! I had more than a half gallon when all done. They’re all gone! Next year I want to plant far more onions than I did this year.
I always grow from seed Patterson and Red Bull onions. Both are long day and storage types.
16:58 the sugar bag has a thread for easy opening. You just pull from one end and the thread will come out! I love that type of closure. It’s so satisfying to open! …and kinda magical!

fyi: place uncooked diced peppers in jars, cover with sugar/vinegar mixture to 1/2 inch from top, then wipe rim of jar with white vinegar place lids with rings finger tight and proceed to can as usual. they wont be soggy from being cooked 2x
Just a thought: to transport your smaller bags of food, stack them on cookie trays or sheets. It can make it easier to move them and carry more.😊

I love my KitchenAid chopper!!!! I use it like you for my jalapeño candy. I also use it to chop my rhubarb in the spring. I live in North Dakota, so I don’t get harvest it as late as you do. I also use it to chop my potatoes, onions and green peppers and make and vacuum seal my own potatoes O’Brien.. also if you don’t like hot cowboy candy the recipe I have cause for 6 pounds of jalapeños I’ll do half jalapeños leave the seeds on those and then the other half as a regular green peppers or red peppers and last year I didn’t have enough jalapeños so I made mine not Serano peppers that was amazing
You should do bulk cheese shredding. If you have the kitchen aide attachment that will make it easy. Ziplock sandwich bags filled with shedded cheese in the freezer.
That is a great idea. Shredding cheese always tires my hands so quickly. 🙂

I keep chicken carcasses and onion/carrot/veg peels and tops in my freezer but am so uncertain about how to create broth, so I thank you for making it look pretty easy!
