These guys mostly use hypnosis, read body language, especially micro expressions and use suggestion as well as basic research.
He's definitely used hypnosis on the coach beforehand. There's an English "mentalist" called Derren Brown who talks in great detail about the techniques he uses. It's still incredible though and the reactions are brilliant.
