Just press the edges with a fork and sealing is done. And u also dip ur finger in water and spread it around the edges of the 1st layer and then seal it with the 2nd layer. Love ur videos by the way😍

I've owned a pasta machine for the past 5 years and have not used it once. Now I have relocated to Asia and my pasta machine is back home in storage. I wish I had packed it with me.
I just love this cooking series! Speaking of Cin Cin, I went there when I visited the UK recently and OMG thank you for the recommendation! One of the best restaurant ever, such great food!

The filling sounds delicious, I would maybe try it with a brown butter and sage dressing, it should compliment the squash quite well. And for your next cooking installment, I would definitely recommend a holiday serie, with appetizer, main dish and dessert

Loooove the cooking videos! I wouldn't cover them with the dump towel, especially if you have a moist filling, it' absolutly fine if they dry out :) We make cappelletti (very small ravioli) every Christmas!
Depending on your food processor you could have kneaded in it - or your kitchen aid! Also for ravioli, watch some videos!! Instead of two sheets, put your dollop of filling to one side and fold the pasta sheet over (like in half the long way). It saves dough and makes it easier to get the air out!
Hi Anna! I think you did really well! We made homemade ravioli last weekend too. Just a few suggestions: we closed the sides pressing with a fork (to have extra sealing and a nice look), and my grandma was always putting the filling on one half of the pasta sheet, and covering with the other half (I think you did it in your second round :)). Also an easy way to freeze the extra ravioli is just to place them on a baking sheet in the freezer until they're hard, then you can move them into a tupperware or bag easily without having them sticking to each other. When you decide to cook them you can do it without defrost them first. Also we always to tagliatelle/pappardelle with the extra dough. We have the attachment for it on the Imperia, otherwise you can just fold the sheet and cut thin stripes.
The Anna Edit yeah, there’s a pasta roller/cutter attachment for the kitchen aid that rolls out pasta and will cut different width noodles. I love it so much more than the hand cranker.

I have this machine and used it many times :) To make your life easier, at the point where you basically have no hands and the pasta piece is too long, you can just cut it with a knife. Also, kudos for dealing with all this flour without an apron, in a black shirt, I couldn't do it haha

Great Sunday activity! Me and a colleague of mine made tortellini stuffed with taleggio and fresh marjoram several months ago. Did you know that dry and stuffed pasta shapes can be frozen up to 1 month layered between sheets of clear film in plastic bags?
I know you just got your pasta roller, but I would HIGHLY HIGHLY recommend getting the KitchenAid attachment! It frees up both of your hands to help the dough through, so much faster! I mean, who doesn't want homemade pasta to hit their belly more quickly?!

It prevents the pasta from sticking together. If you fancy, you could season these ravioli with butter, a balsamic vinegar reduction, and parmesan cheese. It would pair really well with the sweetness the filling you made :) Love you :*

You can push down the edges with a fork which also gives it a nice pattern. Next time try also heating some butter in the pan and fry sage with it before you pop the cooked ravioli in. Top with parmigiano😍
🙋🙋that's us!!! We got ours in Lidl like 3 years ago. We do eat pasta every week but we just go and buy it made 🙈🙈🙈😂😂😂. I must say, we've made like linguine type twice but never again. We made such a mess 🙈🙈 Specially hanging it and all of it dropping on the floor everywhere 😂😂😂😂 I think we better get it out again 🤔🤔🤔😉💚

For the air inside the ravioli problem maybe try to push the dough and seal the two layers first between each dollop of filling and the other (going from one end to the other) and then seal the longer sides! :) (I don’t know if it makes sense lol)
While watching that I was desperately hoping you’d go and watch a Jamie Oliver pasta making video. I’ve never made pasta but I’ve seen so many videos of Jamie doing it that I could see those air pockets forming 😂 Impressive results though guys, that filling looks delicious. Not too garlicky?
If you want pasta to be more yellowy and less "hospital like", try to look for eggs especially "made for pasta". In Italy we have that kind of eggs (nothing strange, hens are feeded with the right -all natural- food that helps enhance the yellow of the yolk) and my grandmas always use those eggs. In the north we just use pumpkin, Parmigiano and a tiiiiiny dust of nutmeg, and if we wanna treat ourselves we go for the GOOD balsamic vinegar on top. We also have tortelli (the kind of pasta you made) filled with potatoes and -sometimes- mushrooms or the classic one is with spinach, a tiny bit of ricotta and a lot of Parmigiano. These kind of tortelli are just eat with Parmigiano on top! If you need help, I'm here :)
I wonder if you could have used a toothpick to pierce the air bubbles and then pressed the hole closed. I' just guessing so I'm probably wrong. Apologies to the Italians. :)
