    Who would have thought that there’s so much to learn (zzz) regarding sake making? Wash, steam, separate, shake the magic mould pepper pot, pile up, wrap, let sleep, unwrap, break up, separate lumps, more pepper pot, mound up, wrap again…and educational, edificational terminology to pick up along the way! Splendid!
    I bet they’re booked out till Christmas…😂

    I love the meticulous attention to detail, like folding the sacks (I do that) and 10 blankets (cuz 9 probably wouldn't do). A great watch. 🥃🌾

    I’m getting déjà vu - I feel like I’ve seen this masterpiece before? Equally as good the second time round! As I said previously, these videos are easily the highlight of my week.

    Really enjoying the series. Huge amount of labour going into this - is this a traditional way of making sake? Do the big producers do a lot of this by machine?

      Great question... it'll depend, but the big guys are producing year-round with many parts that we are doing by hand, such as koji making, automated.

    Ooooh, I noticed your use of the term "kojified." I don't mind it at all, but I'm curious about how it's perceived internationally.

      I find it completely natural - there is rice, it becomes koji -> it's being kojified!

      ​@@KanpaiPlanet While it isn't part of the common vocab about sake, I think there is enough explanation about what koji is in the video to allow the use of this rather liberal, but creative new term. I would certainly give my vote to adopt kojified as a common terminology. 😉

      As the English language vocabulary around sake making is constantly evolving, and many have kindly commented that this is the most in-depth look at the process ever produced, I proud of have been at the forefront of pushing the sake lexicon foward!
