That was a great comparison! Essentially, STFC is the better thematic game while STA is the better strategy game. I like to say that STFC is "Star Trek in a box", while STA is merely a Star Trek themed 4X game. Also, you ought to at least give Fronteirs a try. While not the most thematic Star Trek game out there, it does justice to the Mage Knight system and stands on its own right. And BTW, The phrase you're looking for at 21:55 is, "sandbox game".
9:56: That supernova card photo comes from a game I played with my friend. It took out two habitable worlds and basically completely undid my friend's whole first turn of the game. I picked up Fleet Captains and the Romulan expansion for $60 for both! (they were "used" - the base game had been played once, and the Romulan box had been opened but all the parts were still sealed). My son and I play one game (Federation vs Klingon), and the way the missions came out, we had war a mongering Federation against pacifist Klingons.
