I use edible glitter a lot as a baker. I would say it's the same as makeup grade mica glitters. Even if it gets in your eyes it won't irritate you (unless you have allergies I guess) because they're so tiny. So you don't really need goggles. I wouldn't say the same for plastic craft glitters though
Anyways, the chances of you getting salmonella from a raw egg is extremely small so who cares. I eat raw cookie dough I make all the time, haha.
