    For quesadillas I like to put some cheese on the entire tortilla then choice of meat then a little more cheese cover with second tortilla, flip like a pancake crisp up second side and cut like you would a pizza.. this lets you add more filling the bottom layer of cheese helps hold ingredients in place while flipping and every bite is full of goodness.

    Whenever Gracie starts meowing my kitties and pups come running. I work at an animal ER and have brought many strays home for fostering. My fur babies are always great about welcoming in a stray that needs help medically and finding a new home.

    When squeezing a lemon, first cut off any hard pointy end and THEN slice the lemon in half. Otherwise, the hard pointy end will prevent the juicer from being squeezed down as far as it should go so you get less juice. See position 12:32 in the video where the lemon has that mountain-shaped end sticking up to fight against the juicer. Thanks for the recipes!

      Doesn’t she have the lemon upside down? You put the hard pointy not down so that the plunger actually goes into the meat and juice of the lemon

    I make quick enchiladas with canned chicken. I dice up an onion add shredded cheese to the chicken. Shred w a fork and stir. Wrap em up w a bit of red enchiladas sauce on bottom of dish. Then cover whole thing w sauce and as much cheese as you want.cover bake til all bubbly and hot through.

    If you add two (2) eggs instead of just one, they will hold together much better, and you add very little calories and add more protein I always do two eggs…give it a try

    We do keto, so I replace the crumbs with parm cheese. Use the cheep stuff in the green can, fresh parm has too much moisture.

    I'm in Ohio, we had totality during the eclipse. I had 14 friends and family members over. We made homemade pasta and homemade sauce. I love your recipes and use many of them regularly.

    One tip I learned (the hard way) is to chill any kind of meat mixture with egg, in the fridge for a while (gives the egg a chance to bind with the bread crumbs) so it's easier to form whatever (meat loaves, meatballs, patties, fritters, etc.) so they don't fall apart. Just something I've learned to do if I have time. All these recipes look delish and you guys do, too.

      Yep. I make these all the time w/ different add-in's. Tiny bit of marinara OR salsa OR bbq sauce.. then use crushed up pork rinds instead of bread crumbs + a hand full or two of shredded cheese. ( = low to no carb/sugar) Chilling before making nuggets or patties is super helpful to keep 'em together. I press them down just a little more so that there's more surface to get crispy. :) Nom nom!

    There is an old recipe (1950’s - 1960’s) that was very popular for Chicken Croquettes which is very much like your fritter recipe. The chicken is held together with a white sauce flavored with dill and lemon, rolled in an egg wash and the bread crumbs. After frying you serve them with chicken gravy. Our family still loves them but I never thought to make them with canned chicken. Fantastic idea!

    Mandy, I love these canned chicken videos, but I was wondering if you would consider videos with tuna. It's cheaper. I know some people hate tuna, but I think some folks HAVE to use it vs chicken. Anyways, thanks for everything you do to share your goodness with us!

    Such a sweet video! I rinse my canned chicken to remove some of the salt. It needs to be drained, so I just rinse first. You have inspired me to try all kinds of new recipes for my parents, so thank you very much!

    Mandy, for the chicken fritters, instead of the fine dry bread crumbs I use fresh bread torn into really tiny pieces and add it to the chicken mix. Sometimes I have to add an extra egg white only, no yolk. Then I use the dry bread crumbs for the coating. I am going to make the quesadillas tonight for supper. And I use canned chicken for salad a lot. I will have to try your recipe. Thanks for all the suggestions. Have a great week!

    Wonderful ideas for canned chicken! Near Fort Worth on April 8th, we got dark enough during the eclipse the street lights & parking garage lights all came on! Amazing!

      I use either canned or rotisserie chicken, whatever is in the house. We are in Ohio, and had a Total eclipse. The owls in the woods near our house were hooting when the light came back!

    I put fajita mix & sautéed onion & peppers with chicken in a lg flour tortilla shell, lay out flat in an oiled skillet. Cover with cheese, fold in half with a spatula, & then fry on the other side. Ppl tell me it’s restaurant quality ❤

    If you let the fritter mix sit for about a half hour before molding them into the patties, the bread crumbs in the mix will soften to the point of assisting the egg to keep things more cohesive, and the patties will be less likely to fall apart. Just a thought.

    One tip about lemons--the thicker the rind, the less juice you will get. I try to buy lemons with a thinner rind or let them sit on the countertop until they feel right. Seems like the pith inside shrinks with time or something. And I think the color changes from light yellow to darker. Hard to explain, but once you know, you know.

    I use canned chicken but I have to rinse it with water first. It also tastes better if you fry it in a skillet for a few minutes. These look really good and easy...Another easy one is to use your rice cooker, jasmine rice, a can of chicken, frozen mixed veggies and soy sauce. Then sometimes I mix in some scrambled eggs at the end..

    Hey Mandy! A lemon squeeze hack I thought of a couple weeks ago when it was too difficult to get any juice out. Cut off the ends (just slightly) of the lemon first then cut it in half and squeeze. SO much easier!

    All that delicious juice from the canned chicken would make a wonderful treat for Gracie. When I drain tuna I always save the juice for my cats. They go crazy for it. 😊

    These are like salmon patties only using canned chicken. When I make salmon patties I use 1 large can of salmon, half a sleeve of saltines crushed, 2 eggs and what ever seasoning you like, I like Old Bay. Fry in avocado oil. Do the same with chicken or tuna or crab. Just change the seasoning for the chicken, maybe poultry seasoning?

    All of those recipes look so good. I use my meat chopper that I use for ground beef to chop up the chicken. It gives it a shredded texture. So good.

    I make my chicken salad with celery a little onion, apple and roasted pecans and mayo. Then I do a cheese melt on it. Yum!

    To make this Keto for me , I used pork rind panko . I used two eggs because the panko absorbed the moisture. I also used almond flour , or any nut flour to add in chkn. Like 1 rounded Tbs. The cheese and spices.

    I tried the salsa quesadillas and they were so good. I had some of the mixture leftover, decided to try something different with it... I put it in a skillet, added some cream cheese. Once everything was heated, melted I used it for a tortilla chip dip. Was very good.

    Mandy I use canned chicken with cream cheese, cheddar cheese and hot sauce mixed up and softened as an easy dip for chips!!!

    I usually just wash the outside of the can, open it, then use the can lid, pushed down inside the can, to press the liquid out.
    I save the broth because the cats/dogs like it as a treat.
    I would probably make the chicken fritters like a salmon patty; instead of bread crumbs, either cornmeal mix or flour, and instead of vegetable oil in the air fryer, a little butter/ghee in the skillet. Your griddle would work just as well. It gets a lot firmer and crispier that way.

    I put my chicken mixture in the fridge for about a 1/2 - 1 hour. You can do this before or after you form the patties. They will stiffen up & are less likely to fall apart.

    I make chicken salad with halved or quartered grapes, chopped pecans and diced celery. Add mayonnaise and it’s delicious. The lemon basil looks delicious. Will definitely be trying these recipes

    TY! Try adding a cup of shredded cheese to your fritter recipe to compliment the flavor and to hold them together better. Also, challenge the hubby to eat 4 saltine crackers (stacked on top of each other) at one time without drinking anything... You should enjoy the entertainment.

    You can add some mayo to your chicken mixture when you add your egg. It will act as an additional binder and help keep them moist. I do this with my salmon patties and the hold together beautifully.

    Mandy, the pressing of the Chicken is also what I do with ground beef but..in a larger bowl to get the beef grease out of the beef when making whatever it is for my dishes, or casseroles. This way we don’t get a a lot of grease in our meals. I might have to wash another bowl but…it’s worth it to get all that grease out.

    I love cooking with canned chicken. I use the same brand from Sam's Club.
    My recipe for chicken salad contains:
    Grapes, onions, dill and sweet relish, pecans, dash of mustard, pinch of garlic, and a mixture of ranch dressing and mayo. My family loves to make chicken salad sandwiches using brioche bread..

    I've got one for you. Quick, easy and low carb and gluten free.
    One bag of cali rice with veggies thrown into a frying pan with a tablespoon of olive. Add a drained can of chicken chopped up in small chunks and stir around til it's all heated through. All done and in less than five minutes

    I taught myself how to pressure can my own chicken a few years ago. I bought a digital canner that makes 5 jars at a time. You just add your cut up chicken breast, a bit of salt and water to your jars and pressure can for 75 minutes for pints. I find the chicken occasionally for 1.99 per pound. It is awesome to be able to pull out a jar of that chicken! Btw, I'm a big fan of Mary Ruth's, I love the liquid vitamins.

    Mandy.. if you add a little of your Dukes.. to your chicken it will help them stay together. If you add more bread crumbs.. it will dry your mixture out.

      Hey Alma, I'm hoping u get thru ur migraines & wonder if u call the surgeons office everyday, if u could snag an earlier time slot? Some surgeries get canceled which could open up another slot for u, and pretty sure u will have a consult office appt before u hear about surgery plans. Ur so sweet, I'm praying u will get some favor from the staff to move ur appt up sooner (did u say June?). Just tell them everything like about the migraines too. I wouldn't be surprised if his first step would be an MRI of ur head, so he can see more detail. There's a sweet way to ask for favor, & I'm hoping u win their hearts too! 💕💕💕💕💕

      @@MrsAlmaTrumble Oh dear, I hope u have antibiotics for that? Be sure to measure out 8C of water (at least) to flush ur kidneys/bladder & hydrate them back into good health.
      Most people don't realize how many steps there are before surgery, and possible additional procedures, so the Dr is able to be precise in his choices. I have several family members who are doctors. I know theres always "wiggle room" to move an appointment up sooner. Ask if he/she has other locations u could tap into as well!       @@MrsAlmaTrumble Hey sweet friend, I stumbled onto an fairly easy to read article about Steroids & how they can help us - so search this: "How Do Steroids Work by Devon Carter online Oct 9 2020." I think it might encourage u that ur Dr's are being proactive & practicing the highest care as u wait for ur appt in June. Still praying u call & get in sooner. I know from experience, the more specialized the longer we usually have to wait tho. Stay hopeful dearest! Love u! ❤️

    Try honey roasted pecans in chicken salad for texture and a hit of sweetness. I break up a few halves and just stick them onto the chicken salad I have spread on the bread. Yummy.

    I’m not sure that I have ever used canned chicken. I certainly will now, especially to make chicken salad. I love chicken salad made with a rotisserie chicken and almonds, but using canned chicken will make it much quicker AND less messy. I use the same kind of lemon press that you have, but the first one I broke from squeezing it too hard. It works a lot better if you just trim off the point on the end of the lemon half that you’re squeezing. Thanks for all the good recipes!😊

    When you make the chicken patties try buttering and browning the bun in a skillet, it adds a lot to the sandwich.

    Next time you squeeze the chicken save the broth to add to soup, etc. 😊 Before forming the patties, let them get cold in the fridge. Makes it much easier. Chopped, roasted pecans instead of almonds good too. Y’all just too too cute!

    Great video! I am always looking for ideas using canned chicken because I'm a home canner and always have canned chicken in the pantry. A delicious, quick sandwich filling is drained, canned chicken, cream cheese and part of a packet of Hidden Valley Fiesta Ranch dip mix (to taste).

    I also recommend saving the drained liquid from the chicken cans. We add water to it & save it for the dog’s food. Just a touch to moisten the kibble. Learned this from a friend who had elderly pets & would let the kibble sit a bit to soften slightly because of their older teeth. He even confessed to using this mixture to ‘top off’ some boxed stock when he thought he had enough but was about a 1/4 cup shy of the recipe. (I admit I haven’t tried that)

    I make pesto chicken salad with a bit of mayo, dill, crema, parmesan cheese, served warm with melted gouda on a croissant. Its fabulous! I use rotisserie chicken. But I love being able to make can chicken taste good!

    When juicing your lemon half, cut the little stem end off. It makes juicing so much easier. ❤

    Try cutting the end of the lemon off before putting it in the squeezer. I love canned chicken. It is a good thing to keep on hand for qick meals. I will definitely be trying the chicken salad recipe.
