This is a well balanced channel. They are not like a boring cooking channel with loads of unwanted stuffs. I usually don't watch lengthy cooking vidoes coz they talk bluff. And this channel's lengthy videos are not boring, they project a different vibes and definitely not missing the essential of cooking and techniques. Way to go.

If tomatoes are out of season, it's better to use good quality canned Italian tomatoes with nothing but tomatoes in them. Because these tomatoes are picked when they are riped and canned. Out of season fresh tomatoes is bad for any makhani. And yes, I have seen lots of Indian restaurants use good-quality canned tomatoes in their makhani gravy.

For the common public in India, finding canned tomatoes might be a larger task than finding ripe tomato varieties in the vegetable market which might be the opposite outside the country. We focus on replicability at home and ease of preparation by anyone when we create recipes but yes, adaptability is a good point to note.
