    My German grandmother did the flour on top of her sourdough starter trick. She said she never has to feed it. And I can say her bread was the best I can remember ever eating.

    Hi, so you use actual sourdough starter for pizza? Why not regular yeasts? Isnt it harder to manage your dough with sourdough?

    I learned this technique from a German lady who has a youtube channel. I've left my starter in the fridge for 2 months unfed and no problems and no flour on top. I created my starter in 2010 and dried it in the oven on with only the light on and painted it on parchment paper in 2014 and placed in a baggie in the freezer and revived it in 2019 and am still using it.

    Hi Massimo i love your channel thanks for all your tips. I've heard that you can freeze a sourdough starter have you ever tried it?

      Yes you can freeze thr starter. But when you defrost may take a week before use you need feeding few times

    Massimo, what are we doing after period in fridge, is need to remove top layer or just add flour and water and mixed?! 🍻

    I followed your starter video I’m day 6 looking bubbly think I did. It right gonna make sourdough pizza first time should I use 00 flour or bread flour I’ll find your sourdough dough video watch it over n over is my plan

    Greetings Massimo. Do you always feed your starter with 50% 00 flour and 50% whole meal flour? With 80% of water

      After 3 weeks, you simply continue feeding the starter as usual. There's no need to remove the top layer of the starter or add extra water.

      three weeks is so long..y advice it make it only for 1 week or ur dough taste sour.
