Bacon U.S.A. - Iowa Hog Farm

Jason Shoultz heads to the top hog farming state in the U.S. In Iowa hogs outnumber people 3 to 1. A hog farmer explains how the breed of hog impacts the taste. The Berkshire breed has recently grown in popularity and that's good news for bacon-lovers. The fattier meat gives the bacon a robust fatty flavor to the bacon.

I raise Berkshires on pasture. They are wonderful pigs to work with and they provide a premium product in my opinion. They have fat but not too much fat. They are a pleasure to raise. I don’t understand how anyone could think that the confinement raised pigs are better. In my opinion, they do much better out of doors in a natural environment with a mud bath and plenty of grass and trees. Their lives are short enough, they deserve to enjoy their time.

I've always preferred long lean bacon type hogs. Hampshire, Tamworths, most older type breeds of Heritage hogs. And Cattle
