- Khatta Dhokla Recipe with Sooji and Dahi
*Ingredients:*
- 1 cup sooji (semolina)
- 1 cup dahi (yogurt)
- 1/2 cup water (adjust as needed)
- 1 tsp ginger-green chili paste
- 1/2 tsp turmeric powder
- 1 tsp Eno fruit salt (or baking soda)
- Salt to taste
*For Tempering:*
- 1 tbsp oil
- 1 tsp mustard seeds
- 1 tsp sesame seeds
- 1-2 green chilies, slit
- A pinch of asafoetida (hing)
- Few curry leaves
- Fresh coriander leaves, chopped (for garnish)
*Instructions:*
1. *Prepare the Batter:*
- In a mixing bowl, combine the sooji and dahi. Mix well.
- Add water gradually to achieve a thick batter consistency. Allow it to rest for 15-20 minutes to let the sooji absorb the liquid.
- Add ginger-green chili paste, turmeric powder, and salt to the batter. Mix thoroughly.
2. *Steaming the Dhokla:*
- Grease a dhokla plate or a shallow dish with oil.
- Just before steaming, add Eno fruit salt (or baking soda) to the batter and mix gently. You will see the batter become light and frothy.
- Pour the batter immediately into the greased plate and spread it evenly.
- Place the plate in a steamer and steam for about 15-20 minutes or until a toothpick inserted in the center comes out clean.
3. *Tempering:*
- In a small pan, heat oil. Add mustard seeds and let them splutter.
- Add sesame seeds, green chilies, asafoetida, and curry leaves. Sauté for a few seconds until aromatic.
- Pour this tempering over the steamed dhokla evenly.
4. *Serving:*
- Allow the dhokla to cool slightly before cutting it into pieces.
- Garnish with fresh coriander leaves.
- Serve warm with green chutney or tamarind chutney.
