Best thing with creases instead of holding edges is you can get a high and low poly model ready for baking without extra effort. Sometimes you might still need holding edges though.

Good question, bacause it looks like it's just playing with it's vertex normals.

How is this different from Beveling with Chamfer ON ?
The tool itself doesn't actually create any geometry, so it can be quicker to work with when modelling since you have less topology to move around

Unfortunately, I don't believe crease values can be keyed
