Many years ago, 30 something while on vacation in Disney, I had a chicken dish at Epcot Centre which was made with chocolate. It was the most incredible chicken I've ever had. I am going to be making this for certain. What struck me right away is the chicken does not have that deep purple colour from the wine as most Coq au vin recipes, which throws me off. The chickens I buy here are quite tender, should I marinade as long? Whiskey, you are the most beautiful boy.

Interesting. I have always used unsweetened chocolate or cocoa in Mexican braises- because, well, duh! It just works. They were combining Chile and chocolate king before Columbus crashed their party and it is an amazing flavor combo. It never occurred to me to throw some into more Euro style braises. I’m sure it’s fabulous as well. I ❤ Whisky!

Ha ha, I feel ya! Sadly in France at present they are converting beautiful wine into hospital grade alcohol due to lack of demand. Millions of bottles worth! That hurts me!!

Yes marinate longer, for both flavour absorption and juiciness. Not more than 48 hours though.
