I love lamb. We get great lamb here in South Africa, I very rarely do a full rack it is usually a bunch of rib or loin chops on the grill, heavily salted on the fat side with some rosemary\garlic and skewered together so we can get the fat crispy and have them stand up on the side easily. I have been seeing a a full rack available more often, def going to give a try at some stage similar to this.

I always cut the entire rack into single chops after a nice oven bake.
I want my youngest guests to have a lamb item that they can easily handle, just as I did as a youngster when my parents cooked lamb chops for my family.
Cutting single chops also aids some of my elderly guests easily manipulate their lamb item.
The only way to make it easier for my guests is when I cut up an oven baked leg of lamb into bite sized chunks that are forkable or spoonable.

As a Brit I also don’t understand why you would want to treat lamb like beef need some rosemary and garlic on them chops!
Hey I’m with you - I like lamb for lamb. But there are lots of folks who don’t and this is a way to make lamb approachable for them too.

Looks like Nakano makes blades from the high end to the low end. I see powder steel, VG10 and 19C27 high carbon steel, all three of these steels are great metals for high end knives. I do have both VG10 and powder steel Japanese knives that I have used for years. They are in the 60 to 62 in hardness and keep their edge for a long time, but you can't use these knives to cut bones. My softer knifes are German with a hardness in the 57 range and they are used when working with bones. What do you think of the MICARTA CHEF KNIFE that you are using? It is a VG10 with great hardness and should be a very nice knife.

I didn’t realize US lamb had a different diet causing a different taste. I’m the only one in my family that loves lamb. Maybe because I’ve been buying imported lamb! Thanks for the video!
Hey sorry for the late reply Brian! You should try American lamb - or at least look for grain fed lamb if you can - and see if the family likes it better. Most do!
Most lamb is grain fed in Australia maybe that’s why we eat so much

Wonderful. I'll be getting some of those for Christmas dinner. I prefer corn fed lamb for less gamey flavor.
I absolutely love lamb. My favorite alternative to steak is thick cut pork chops. I get an entire pork loin, cut it into 1 3/4" thick chops. I will brine or marinate them overnight. The next day, I bag them up and cook them in the sous vide. Then I finish them off on the grill. It's almost as good as steak. After that, I'm a lamb man.
I wish more of my audience appreciated sous vide. I've used it in a couple of videos and nobody seemed interested so it's in my kitchen but not on my channel anymore :-(
@@EatMoreVegans It's kinda hard to compete with Guga using sousvide. It's my favorite way to cook, by far. A close second to my favorite is cooking on the smoker.

Truth be told, I haven't had lamb yet. I'm sure I will like it when I finally cook some. I have eaten goat and absolutely loved it. Looking forward to checking out your new knife sponsor. I prefer knives for the kitchen then knifes for a movie set for Is barbarians 😂. Cookies lamb is on my to do list for this coming. You mentioned something I have never heard before about Frenching. I always thought it was just for looks. Now I understand it's because the meat between the bones would over cook. Makes sense to not waste it and cook separately. Great video. By the way I never get tired of steak. But maybe that's because I enjoy eating different cuts. Have a great day.

Hi Richard. As companies grow often their priorities change, as do some of the people. We just don’t see eye to eye on a lot of things, some of them financial and some not. But as far as I know they continue to stand behind their products. If you have a quality problem they have always been very fast to replace items and take good care of folks.

Some folks do like that overcooked meat - I think it’s better served in lamb sausage myself.
Free-Range Lamb from the UK is some of the most highly prized and can't really be bettered, but virtually impossible to get in the US.
