I love this recipe and I made it twice following the instructions and the ingredient measurements but every time I made it the kremsnite collapse over the pan when I remove the ring. They are extremely delicious but they don't hold their shape. Can you please inform me why this happens? Greatly appreciated! :)
The 2 most commos hickups are: cooking of the pattisserie cream, you really need to cook it through, it could take up to 10 minutes. The other one is the cooling time of the dessert. The best option is to place it in the fridge overnight. You can also try adding 1 tbsp (about 20 g) extra flour to the cream. That way it should hold it’s form 👍🏻

@@sasosketa actually I found out the most common mistake is mixing the yolk cream with whites. The recipes don't tell you about it or one even told us you have to cool down the cooked cream somewhat. The cream has to be HOT and mixing with whites relatively fast (not like the usual use of whipped whites) so that the hot cream coagulates the whites and makes everything together the desired stiffness
Zanima me zakaj je v receptu med videom napisano 160g moke, v spodnjem receptu pa 180g moke. Je možno da mi zato že 2x niso uspele kremšnite saj se takoj razlezejo
To, da se ne zgosti krema je najpogostejša težava pri kremnih rezinah. Po mojih izkušnjah sta dve stvari, ki najbolj vplivata na kremo pravilno stepeni beljaki (ne smejo biti premehko stepeni) in pa čas kuhanja kreme. Če ste delali po tem receptu se krema kuha okoli 6 minut, lahko se pa zgodi, da traja tudi dlje, vse do 10 minut. Odvisno kako vroče imate nastavljen štedilnik. Jaz jo kuham na srednjem ognju, indukcija na 6-ki. Potem morajo pa še res dobro odstati v hladilniku.

V videu nam jo je ponagajal škrat, zato smo popravili recept v opisu. Pravilno je 180 gramov moke. Lp, Sašo
