I caught one the other day from the Tyne river in England mate. My hometown used to be the herring kipper capitol of the world before the greedy greedy fisherman and corporations wiped them out in the early 70s. The stocks sadly still haven’t recovered to the extent they once were. Terrible the same thing happened with the mighty Cod fish. I’ve seen black and white photos of the monster sized fish they used to bring back to the quay. Catch a cod over 15 pounds and it’s in all the magazines and in the papers nowadays. Please don’t let the evil corporations and Freemasons destroy your country like they did mine.
Same! But I do love Brunswick Kippers. It's the only food I get yelled at by the women in my life for eating! I have to wait until I'm alone to crack a can open or everyone gets mad at the smell 🤣🤣🤣
The canned ones are an approximation of the real deal, but 'fresh' is obviously best. I figure that you probably won't get to taste the real thing unless you travel, or you manage to source some frozen herring and make your own. The word 'kipper' is actually a verb, as in 'kippered herring', and hot smoked salmon is 'kippered salmon', so you could probably make a close approximation by salt curing and then hot-smoking some fatty salmon fillets in a kettle BBQ or Big Green Egg.
That was the time of real kippers my family made kippers from summer herring from west coast of Scotland not like now with defrosted large imported herring with large bones and no delicate taste.

I assume it's in Lowestoft, as it says on the kipper packaging box, 'T.Jones Lowestoft'.

Unfortunately it's a butter pat. Utterly ruins the flavour. You will never get proper smoked kippers with buter.
