Thanks Nisha, great video. I realised some time ago that I could get the rice to boil and then turn off the heat but I’ve still been using far too much water. I must try this out.
I have been making perfect rice since I was 8 years old. I used to love to watch Top Chef because every single one of them screwed up the rice! :-) but I don't cook mine like yours I cook mine like America does even when I lived in England I taught them to cook my kind of rice and it was much better and fully cooked. All you do is bring the rice and water to a boil cover it put the heat down to low as low as it goes and in 15 to 20 minutes rice perfection! Easy peasy lemon squeezy. :-)
I do that too. But I soak the rice for 30 mins after washing the starch out. Then drain, add 1.45 cups water to 1 cup of rice, bring to boil with lid off and when it starts boiling I turn heat to lowest setting, pop the lid on and 17 mins later i take off the heat and let sit with lid on for 5 mins. Then i fluff the rice and it's perfect every time.
Before I went on Nisha's curry course, I always used the Delia method. Now, I use Nisha's. Both have the same water/rice ratio. But Nisha's method is easier and quicker. It's never damp and it never has a barbecued bottom. And using basmati rice, it tastes so much better.

a bit confusingly made this one. Suddenly you've got fried rice on the go with no intro to it. Maybe you could clarify this video a bit with a remake?

when you say "as soon as it starts to reduce you cover it and let it cook itself" do you mean you turn off the flame? or do you just lower it?
I mean switch the heat off-lid on-wait 15 mins
