For those wondering what his two noble phantasam do they're a similar concept to mind eye(both true and false variations). But on a whole other level. Both arms have access to Thaumaturgy Foundations(which allows him to access any magecraft he wants but boosted by both noble phantasm hands to a whole other level ontop of that he is notified and can use magecraft abilities that he didn't even know were a thing and is notified on not only knowing how to use them but also how to infuse them) Now the difference between the two is that the left arm makes his body unable to age while the right arm gives him precognition. Left hand gives him Mind Eyes False(which are given to some heroes who are naturally gifted and have good insticts enhancing it). Right hand gives Mind Eye True(which are given to servants who have honed their insight or detection capabilities essentially giving him better wisdom). Put these two together and it heaviliy increases his baptism rite(which enhances the effectiveness of his spiritual body) Now due to the scaling of these abilities they aren't actually that amazing as the effective of these abilities are quite low due to Shirou being not that very strong for a servant but because he's summoned as a ruler class these abilities are actually boosted tremendously in terms of scaling have actually become viable. Also it's heavily implied to gather magecraft abilities from now just past or present but also the future that has yet to exist which makes sense since this power is gifted by the holy grail and Shirou Emiya became a spirit summoned from the future as a servant.
Also if you're wondering why he cut his right hand off. He did it because in order to create Zero-Order Convergence( a literal black hole effect), he had to combine two magecraft abilities to make it. The problem is one of them(that being space the magecraft space isolation) latches the onto the user meaning it would've dragged him into the black hole so he had to cut one off.Thankfully Degenerative Drive( the other magecraft ability used to make the black hole) doesn't permanently latch onto the user and just fused into the sliced off hand creating the black hole. As to why he cut off the right idk he realistically should've kept it cause it would've helped with the battle with the whole precognitive thing. But it's probably because he didn't expect Sieg to be a threat and assume he won and because even if everyone became immortal he probably was worried if people would still age or not so he probably kept the left arm for that reason alone and chose to sacrifice to right arm instead even though it would've won him the fight as he would've seen to suicidal explosion earlier. Due to the precognition and ageless effects being passive abilities from the noble phantasam arms. P.S sorry that these are so god damn long they're complex to explain in the most simplest terms and I understand why the anime studio did not add the details as to what his abilities actually do.

Trust me, apocrypha is rly good, not as good as like ubw zero or hf, but still a really enjoyable anime, amakusa is in my opinion the best villain in the whole fate franchise
